Air Fryer Shrimp Fajitas

When I made this recipe for Air Fryer Shrimp Fajitas the other night I was secretly apologizing to my air fryer for ever doubting it.

I will admit my first impression of an air fryer was WAAAYYYY wrong…hey, I’m not ashamed to admit when I’m wrong at all.

I first thought it would be another appliance that would sit and gather dust and I was not interested AT ALL.

Well now that I have one I feel I would be lost without it.

They were amazing…I mean extra AHHHHMAAAAZING!

How to make Air Fryer Shrimp Fajitas

This starts with a pound of shrimp, that I already bought peeled and deveined.

Pat the shrimp dry with paper towels and put it in a bowl.

Add some thinly sliced red bell pepper, yellow bell pepper, and red onion to the bowl.

It’s pretty important to thinly slice the peppers and onions because the shrimp will only take 8 minutes in the air fryer.

Thinner strips will cook perfectly in that time, but thicker ones may take a bit longer.

Remember how I said earlier that I need simple in my life…that’s why I am using a fajita seasoning packet for these.

Add it to the bowl with the shrimp and veggies.

Also add minced garlic, olive oil paprika, and chili powder for that extra pop of red color and extra flavor.

Toss it all together and this dinner is ready for the air fryer!

I have a fairly large air fryer, and this took two batches.

It really wasn’t a big deal because when the first batch was done we ate round one.

And by the time the second batch was done we were ready for our seconds.

Therefore both batches were perfectly warm and fresh!

Half of the fajitas go into the air fryer basket, set to 400 degrees and set for 8 minutes.

While the fajitas cooked I set out some soft tortillas, salsa, sour cream, cheese, and shredded lettuce.

After 8 minutes they were cooked to perfection and everyone made their own shrimp fajitas.

Meal Prep Idea

Lucky for me, my son only had one shrimp fajita!

Which meant I got to pack a delicious shrimp fajita meal prep salad.

The lettuce was already shredded and the dressing was just sour cream and salsa mixed together.

It was seriously one of the best salads I’ve ever had the next day at lunch.

I even packed some crushed up tortilla chips on the side for some crunch 🙂

Air Fryer Shrimp Fajitas

Season the shrimp and veggies and and then the air fryer does all the work

Ingredients

  • 1 pound jumbo shrimp peeled and deveined
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 Tbsp olive oil
  • 2 cloves garlic minced
  • 1 1 oz. packet fajita seasoning
  • 1 tsp paprika
  • 1 tsp chili powder
  • 8 fajita size soft tortillas
  • Fajita fixings of choice: shredded lettuce, sour cream, shredded cheese, and/or salsa

Instructions

  1. Pat the shrimp dry with paper towels and place in a large bowl.

  2. Thinly slice the red pepper, yellow pepper, and red onion. Place the thin slices in the bowl with the shrimp.

  3. Add the olive oil, garlic, fajita seasoning packet, paprika, and chili powder. Toss until evenly mixed.

  4. Put half of the shrimp fajitas into the air fryer in a single layer. Set the air fryer to 400 degrees for 8 minutes.

  5. Remove the first batch of shrimp fajitas from the air fryer basket and repeat with the other half.

  6. Serve with warm tortillas and fajitas fixings of choice such as shredded lettuce, sour cream, shredded cheese, and/ or salsa.
