Air Fryer Mexican Street Corn

I’m not saying I would never grill it again, but especially for cold or rainy days making this easy recipe for Air Fryer Mexican Street Corn is something I will make a lot!

Usually I make it on the grill, but I thought I’d give it a whirl using my air fryer.

It was pretty darn amazing!

I went the lazy route and got my corn already shucked from the store.

They had the ends trimmed so it fit perfectly in my air fryer.

You may need to cut the corn in half depending on the size of your air fryer.

How to make Air Fryer Mexican Street Corn

The sauce that gets brushed on the corn is simple enough to make.

Just mix together mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper.

The cotija cheese just gets crumbled in a bowl, and chop up some cilantro to sprinkle over top.

Brush the corn with some olive oil and sprinkle all side with kosher salt.

Ready for the Air Fryer…

Place the corn in the air fryer basket and set for 10 minutes at 400 degrees.

You may need to do two batches if your air fryer is on the smaller side like mine.

We did two batches of three ears of corn each.

Flip the corn halfway through cooking.

It comes out perfectly cooked and with no effort on your part 🙂

Now comes the fun part…”painting” the corn with the mayo mixture, as my son calls it.

Make sure you get it on all sides.

I would suggest doing this on a tray or baking sheet because it can get messy.

Sprinkle the crumbled cotija cheese over all sides as well.

You could also put the cheese right on the tray and roll it around in the cheese.

Now just sprinkle with more chili powder and some fresh cilantro.

Serve with lime wedges to squeeze over top.

This was a HUGE hit at my house, I mean everyone wanted more and more of this Air Fryer Mexican Street Corn.

Mexican Street Corn made super simple in the air fryer

Ingredients

  • 6 ears corn on the cob
  • 1 Tbsp olive oil
  • kosher salt
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1 tsp garlic paste or minced garlic
  • 1/2 tsp chili powder (plus more to sprinkle over top)
  • pinch of ground red pepper/ cayenne pepper
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 6 lime wedges

Instructions

  1. Brush the corn with olive oil and sprinkle with kosher salt. Place in the air fryer basket.

    Note: If corn is large, cut each ear in half so they fit in the air fryer basket. Depending on the size of your air fryer you may need to cook in two batches.

  2. Set the air fryer for 10 minutes at 400 degrees, flip halfway through cook time.

  3. While the corn cooks mix together the mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper. Stir until evenly combined.

  4. Remove the corn from the air fryer basket with tongs (they will be hot) and transfer to a tray or baking sheet. Brush the corn with the mayo mixture on all sides, then sprinkle with the crumbled cotija cheese. 

  5. Sprinkle more chili powder and cilantro over top and serve with fresh lime wedges.
