Pepperoni Pizza Zucchini Noodles
Seriously, this recipe for Pepperoni Pizza Zucchini Noodles were so flavorful and satisfying, it can be made in a skillet or your Blackstone griddle!
I have been on quite the kick lately trying to make some of my old favorites, but using low carb substitutes like cauliflower rice and zucchini noodles.
A hand held spiralizer is what I use, it’s simple, small, and gets the job done.

How to make Pepperoni Pizza Zucchini Noodles
Preheat a large skillet or your Blackstone griddle over medium heat and add some olive oil and a diced onion.
Let that cook for a few minutes.
Then add the spiralized zucchini along with some garlic, kosher salt, pepper, and crushed red pepper flakes.

After a few more minutes add some marinara sauce, sliced pepperoni, and Italian seasoning.
I cut the pepperoni in half because I find it’s easier to eat.
This is my Homemade Hidden Veggie Spaghetti Sauce.
I make it in huge batches and then freeze it in smaller containers.
But any spaghetti sauce that you like will work just fine 🙂

After another minute or two we are ready for the cheesy goodness.
Mozzarella and parmesan get sprinkled over top and it melts in no time.

Taste for seasoning Pepperoni Pizza Zucchini Noodles and add more kosher salt, pepper, crushed red pepper if needed.
This dish reheats beautifully!
So if you have leftovers just pack them up and microwave when ready to go for round two.

Pepperoni Pizza Zucchini Noodles
A delicious and low carb way to enjoy all the yumminess of pizza
Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- kosher salt, pepper, crushed red pepper flakes
- 3-4 zucchini (small to medium in size) spiralized into zucchini noodles
- 1 tablespoon garlic paste or fresh minced garlic
- 1 1/2 to 2 cups marinara/pasta sauce
- 4 ounces pepperoni slices cut in half
- 1 teaspoon Italian seasoning
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons grated parmesan
Instructions

Preheat a large skillet or your Blackstone griddle over medium heat and add the olive oil, diced onions, kosher salt, pepper, and crushed red pepper flakes to taste. Cook 5-6 minutes, stirring occasionally.

Add the zucchini noodles, garlic, and more kosher salt, and pepper. Cook 4-5 minutes, stirring occasionally.

Add the marinara/pasta sauce, pepperoni slices, and Italian seasoning, stir until evenly mixed and cook 1-2 minutes. Top with the mozzarella and parmesan cheese and remove from heat when cheese is melted.

Taste for seasoning, add more kosher salt, pepper, crushed red pepper, and/or Italian seasoning to taste.
