Cheesy Garlic Zucchini Noodles

About a month ago I decided to make this recipe for Cheesy Garlic Zucchini Noodles!

Funny back story…my husband is very thoughtful and buys me random gifts, anything he thinks I might like he brings home for me (happy wife=happy life đŸ™‚ ).

Well, one day about three years ago he comes home with this zucchini veggie spiralizer, thinking I might like it because it’s food related (he gets me).

I did, but I wasn’t sure what to do with it, so I put it in my kitchen drawer and kind of forgot about it.

It’s become a joke around our house that it only took three years for me to use the darn thing, and now I can’t stop!

I have made about 10 spiralized veggie dishes this month and all have been amazing.

I started just making the zucchini noodles for myself (40 year old me can’t eat pasta like I once could), and gave everyone else regular pasta noodles because I assumed my family wouldn’t eat them.

But they all started trying mine and they all like it, so that’s a win too.

The look on my husbands face was priceless, all scrunched up like a kid who didn’t want to try veggies and then he was like “oh, that actually is good”

How to Make Cheesy Garlic Zucchini Noodles

I twist a zucchini in the little gadget and beautiful low carb and keto friendly zucchini noodles are magically created.

My kids love to help with this part.

The zucchini noodles shrink in size as they cook, so it may look like a ton of noodles, but they decrease in size.

In my family we average about 1 zucchini per person.

They cook up super fast, about 8-10 minutes in a skillet over medium heat and toss them as they cook.

I started these in butter, but other dishes just a drizzle of olive oil.

I seasoned them with kosher salt, pepper as they cooked.

After 4 minutes I added fresh garlic.

After another 4 minutes add your cheese of choice.

I used a blend of Italian cheese.

Cheesy Zoodles

Toss it around for another minute until the cheese is melty.

Taste for seasoning and add more salt or pepper if needed.

I’m a pepper freak, so lots of fresh cracked pepper goes on mine.

So that’s it, more cheese on top never hurts.

Cheesy Garlic Zucchini Noodles are an easy side dish or serve as a meal with some chicken parmesan or whatever meat you choose.

Ingredients

  • 4-5 zucchini
  • 1 Tbsp butter or olive oil
  • kosher salt and pepper
  • 3 cloves garlic minced
  • 1 cup shredded cheese of choice

Instructions

  1. Make the zucchini noodles with a veggie spiralizer.

  2. In a skillet over medium heat add butter or oil, then zucchini noodles. Season with kosher salt and pepper.

  3. Toss around in the skillet for about 4 minutes, add minced garlic.

  4. After 4 more minutes add the shredded cheese. Toss around another minute. Check for seasoning, add salt or pepper if needed.

  5. Serve with more cheese on top.
