I had to come up with recipes using leftover ham. That’s how Chicken Cordon Bleu Flautas began.
True story…It was Dr. Seuss week in my classroom and I had the bright idea of making my students Green Eggs and Ham.
They were freaked out at first but they almost all ended up loving it.
It was super fun activity for sure.
I bought a whole bone in ham and only ended up using half of it.
I’ve heard them called “taquitos” and also “flautas”, I wasn’t sure the difference so I looked it up.
Taquitos are traditionally made with corn tortillas, and are usually a little thinner and served as more of an appetizer.
Flautas are rolled in flour tortillas, stuffed more, and served as more of a main dish.
Both are pan fried in oil, but I cut calories when I can, so I baked mine. (It at least made me feel a little better about including the cheese)
Whatever you call them, they were a hit with my family, easy to make, and a definite do-again!
And if your husband asks “Ummm, what the heck is a flauta?!?!” like mine did, you have a perfectly good answer 🙂
How to Make Chicken Cordon Bleu Flautas
I used shredded swiss cheese, but you could easily use sliced swiss.
Then just rolled the shredded swiss, diced ham, and cooked, shredded chicken in taco size tortillas.
I brushed each one with olive oil, put them seam side down on a baking sheet.

Then bake at 425 for 10-15 minutes and drizzle with Maple Dijon Sauce or even just store bought honey mustard.

Crispy golden deliciousness for sure!
I think I probably should have baked them on parchment paper because the baked on cheese was a little tough to clean (but on the other hand, picking the cheesy crispies from the pan was awfully yummy).

Chicken Cordon Bleu Flautas
All the chicken cordon bleu ingredients with a fun and creative spin
Ingredients
Chicken Cordon Bleu Flautas
- 8 taco size flour tortillas
- 1 1/2 cups ham diced
- 1 1/2 cups shredded swiss cheese
- 1 1/2 cups cooked, shredded chicken
- olive oil
Maple Dijon Sauce
- 1/2 cup real maple syrup
- 1/2 cup dijon mustard
- 1/4 cup light mayo
- Optional: 1 tsp horseradish sauce for a little kick
Instructions

If making the Maple Dijon sauce, just whisk together the ingredients in a bowl and set aside.

Lay your tortillas flat, in each tortilla put some ham, swiss cheese, and chicken.

Roll each tortilla and place seam side down on a baking sheet.

Brush all sides with olive oil and bake for 10-15 minutes in a 425 degree oven.

Serve with honey mustard or the Maple Dijon sauce.
