Thai Peanut Glazed Chicken
My husband and I have been on quite a grilling kick this summer. This Thai Peanut Glazed Chicken is one of my favorite recipes that we have grilled so far.
We currently have 2 Traeger grills, a propane grill, and a smoker on our patio and we put them to good use for sure.
Even though summer is coming to an end, I’m still not quite ready to make the transition to fall-like cooking.
So we made Thai Peanut Glazed Chicken for dinner this past week along with Grilled Garlic Rosemary Fingerling Potatoes, both were simple and delicious!
I made the marinade the night before with soy sauce, Thai chili sauce, honey, peanut butter, lime, ginger paste, garlic paste, and Sriracha by whisking it all in a bowl.
The chicken goes into a gallon size baggie and just a 1/2 cup of this mixture goes over the chicken.
The rest I simmer for 10 minutes to create the sweet and sticky glaze.
So when I got home from work the next evening, the glaze was already done.
And all I had to do was throw the chicken on the grill for a few minutes per side.
Also brushing with the glaze the last few minutes of grilling 🙂
Serve with extra glaze on the side along your Thai Peanut Chicken with more lime, crushed peanuts, and green onions 🙂

Sweet and Sticky Thai Chicken Wings uses a very similar Thai peanut glaze.
