Thai Peanut Glazed Chicken

Thai Peanut Glazed Chicken

My husband and I have been on quite a grilling kick this summer. This Thai Peanut Glazed Chicken is one of my favorite recipes that we have grilled so far.

We currently have 2 Traeger grills, a propane grill, and a smoker on our patio and we put them to good use for sure.

Even though summer is coming to an end, I’m still not quite ready to make the transition to fall-like cooking.

So we made Thai Peanut Glazed Chicken for dinner this past week along with Grilled Garlic Rosemary Fingerling Potatoes, both were simple and delicious!

Garlic Rosemary Fingerling Potatoes

I made the marinade the night before with soy sauce, Thai chili sauce, honey, peanut butter, lime, ginger paste, garlic paste, and Sriracha by whisking it all in a bowl.

The chicken goes into a gallon size baggie and just a 1/2 cup of this mixture goes over the chicken.

The rest I simmer for 10 minutes to create the sweet and sticky glaze.

So when I got home from work the next evening, the glaze was already done.

And all I had to do was throw the chicken on the grill for a few minutes per side.

Also brushing with the glaze the last few minutes of grilling 🙂

Serve with extra glaze on the side along your Thai Peanut Chicken with more lime, crushed peanuts, and green onions 🙂

  • 3/4 cup soy sauce
  • 1/2 cup sweet Thai chili sauce
  • 1/2 cup honey
  • 1/2 cup peanut butter
  • 1 Tbsp lime juice
  • 1 Tbsp ginger paste (or fresh minced ginger)
  • 1 Tbsp garlic paste (or fresh minced garlic)
  • 1 Tbsp Sriracha
  • 4 chicken breasts
  • Optional toppings: crushed peanuts, lime wedges, green onions

  1. In a mixing bowl, whisk together soy sauce. sweet Thai chili sauce, honey, peanut butter, lime juice, ginger, garlic, and Sriracha until evenly combined.

  2. Put the chicken in a gallon size plastic bag, pour 1/2 cup of the soy sauce mixture over the chicken. Massage the bag until the chicken is evenly coated. Marinate at least 1 hour or overnight.

  3. Pour the remaining soy sauce mixture into a saucepan. Bring to a boil and reduce heat to simmer for 10 minutes, whisking often, it will thicken to create a glaze. Remove from heat and set aside or store in a container in the fridge until ready to use.

  4. Grill the chicken over medium heat for 4-5 minutes per side, then brush the glaze on both sides and grill an additional 1-2 per side on medium high heat.

  5. Serve with additional glaze on the side and also with crushed peanuts, lime wedges, and green onions over top if desired.
