Garlic Rosemary Fingerling Potatoes
Garlic Rosemary Fingerling Potatoes can be either grilled or baked in the oven.
So when I got this bag of fingerling potatoes at the store, I had no idea half of them would be this gorgeous purple color!
Very pleasant surprise!
My family had to do a double take.
But once I convinced them they taste just like a regular potato, they were a HUGE hit.
They make the perfect side dish to just about any meal.
How to Make Garlic Rosemary Fingerling Potatoes
My secret trick is using garlic paste instead of minced garlic.
Minced garlic won’t stick as well and it has a tendency to burn.
The paste coats the potatoes evenly (I guess my secret is out 😉 ).
And the paste is easy to find in the produce section of the grocery store by the fresh herbs.
Coat them with olive oil, kosher salt, pepper, garlic paste, fresh minced rosemary.
Then they are ready for either the oven or the grill.
I grilled mine over low heat, keeping the temperature around 375-400 degrees.
10 minutes per side and an additional few minutes with the heat on medium high for an extra crispiness.
Toss them in some melted butter and add a bit more kosher salt, pepper, and rosemary as well.
Usually I’m a dipper, I dip almost everything in some sort of sauce…but I am pinky promising you these Garlic Rosemary Fingerling Potatoes are 100% amazingly delicious just as they are 🙂

Garlic Rosemary Fingerling Potatoes
A flavorful and easy fingerling potato side dish
Ingredients
- 1 1/2 pounds fingerling potatoes
- olive oil, kosher salt, pepper
- 1 Tbsp garlic paste (or fresh minced garlic)
- 1 Tbsp fresh minced rosemary
- 1 Tbsp melted butter
Instructions

Cut each fingerling potato in half lengthwise. Place in a bowl and drizzle with olive oil, add kosher salt, pepper, garlic paste, and fresh rosemary. Toss until evenly coated.

Cook the potatoes in either the oven, grill, or pellet grill.
Oven: Lay the potatoes cut side up on a lined baking sheet. Place in a 400 degree oven for 10 minutes. Flip the potatoes and bake for an additional 10 minutes. Turn the broiler on high for 2-4 minutes.
Grill/ Pellet Grill: Place the potatoes cut side up on a grill set to low for 10 minutes, grill should be closed and temperature should be around 375-400 degrees. Flip them and close the grill for an additional 10 minutes. Turn the grill on medium or medium high for 2-4 minutes.

Toss the potatoes with melted butter and more kosher salt, pepper, and/or rosemary if desired.
