Chicken Caesar Flatbreads
I opted to call this easy dinner recipe Chicken Caesar Flatbreads to throw my husband off a bit, you know so he wasn’t expecting a normal pizza.
I’m not gonna lie, I was a bit nervous serving my husband pizza topped with salad.
He’s for sure a guy’s guy and loves his wings, beer, and meat lovers pizza.
Well, well, well, he actually LOVED them, complimented me several times, and went back for seconds AND thirds 🙂
How to make Chicken Caesar Flatbreads
The chicken I kept super simple to let the Caesar salad be the star of this show.
Just some kosher salt, pepper, and crushed red pepper is all the seasoning I used.
Then into a skillet over medium heat with some olive oil for 4 to 6 minutes per side.
The cook time really depends on how thick the chicken breast is.
Once the chicken is cooked and cooled, dice it into bite size pieces.
So for the flatbreads we are using Stonefire Naan Flatbreads from the store.
They are already cooked, absolutely delicious, and make this dinner extra simple to prepare.
Place them on a lined baking sheet and brush with some olive oil mixed with minced garlic.
Then top with the cooked, diced chicken.
And a sprinkle of shredded mozzarella cheese.
Cooking the Chicken Caesar Flatbreads
They go into a 400 degree oven for 10 to 12 minutes, depending on how crispy you like your flatbreads.
As the flatbreads cook, go ahead and prepare the Caesar salad.
In this case we are using a Caesar salad kit from the store.
If you haven’t realized from the store bought flatbreads, I like to take shortcuts.
I’m not a chef, I’m a tired, working mom just trying to make a decent dinner 😉 .
Trust me…if you’re in the same boat as me, these salad kits are awesome and a HUGE time saver!
Top each flatbread with some of the Caesar salad and serve any remaining salad on the side.
There really is something extra special about the crispy flatbread, melted cheesy goodness, and the refreshing salad over top 🙂

Chicken Caesar Flatbreads
Chicken Caesar Flatbreads are a quick, easy, and delicious meal made super simple using Naan flatbreads and a Caesar salad kit!
Ingredients
- 1 boneless, skinless chicken breast (approx 1/2 to 3/4 pound)
- 1 1/2 Tbsps olive oil
- kosher salt, pepper, crushed red pepper flakes
- 2 cloves garlic minced
- 1 package Stonefire Naan Flatbreads (2 flatbreads come in one package)
- 1 1/2 cups shredded mozzarella cheese
- 1 10.8 oz bag Dole Chopped Caesar Salad Kit
Instructions

Set a small skillet over medium heat and add 1/2 Tbsp of the olive oil. Sprinkle the chicken with kosher salt, pepper, and crushed red pepper flakes, put the chicken in the skillet. Cook 8 to 10 minutes, flipping halfway through cooking. Remove from skillet, let cool, and dice into bite size pieces.

In a small bowl whisk together the remaining 1 Tbsp olive oil and garlic. Brush the Naan bread with the garlic oil.

Place the Naan flatbreads on a lined baking sheet. Divide the diced chicken evenly on the flatbreads and sprinkle with the shredded mozzarella cheese. Place in a 400 degree oven for 10 to 12 minutes.

While the flatbreads bake in the oven, prepare the Caesar salad kit according to package directions.

Let the flatbreads cool slightly and top them with some of the the prepared Caesar salad, serve any remaining Caesar salad on the side.
