Veggie and Hummus Flatbreads

I made lots of recipes including these incredible Veggie and Hummus Flatbreads!

It’s a very rare occasion when all of my kids, dog, and even my grand-dog are all able to get together for an afternoon of fun.

What do we do for fun in our family…eat of course!

Here’s how to make Veggie and Hummus Flatbreads!

Lots of diced, fresh veggies are the start to this dish…red bell pepper, yellow bell pepper, zucchini, and an onion.

I started the veggies in a skillet over medium heat with olive oil, kosher salt, pepper, and crushed red pepper flakes.

I cooked the veggies for about 8 minutes, stirring a few times.

Then add some garlic and balsamic vinegar and cook a few more minutes.

The garlic I like to add toward the end so it doesn’t burn, as it will cook faster than the other veggies.

And the balsamic vinegar will add a unique tang to the veggies.

The flatbreads are Stonefire Naan breads that I get in the bread section of the grocery store.

Naan Bread

Two come in a pack and they are already cooked, making them very convenient.

Just toast them for a few minutes in a toaster oven or regular oven.

Then spread a 10 oz container of hummus evenly over top.

The warm veggies get piled on, and as you can see there’s no shortage of veggies here 🙂

Press down slightly so they stick to the hummus.

Next top these gorgeous Veggie and Hummus Flatbreads with crumbled goat cheese.

A little goes a long way with goat cheese, so only about 1 oz per flatbread is all I used.

This was the first dish of our little snack-fest so we tried to not devour all of them to save room for the other yumminess.

It was very hard to resist though.

And hey, even my husband who thinks it’s not food unless it contains meat doubted them at first, but ended up loving them 🙂

Veggie and Hummus Flatbreads

Veggie and Hummus Flatbreads are the perfect light meal or snack, toasted Naan flatbreads with hummus and balsamic glazed veggies topped with goat cheese!

Ingredients

  • 1 Tbsp olive oil
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 onion diced
  • 1 zucchini diced
  • kosher salt, pepper, crushed red pepper flakes
  • 4 cloves garlic minced
  • 2 Tbsps balsamic vinegar
  • 2 Naan flatbreads
  • 1 10 oz container hummus (I used Sabra Roasted Red Pepper Hummus)
  • 2 oz crumbled goat cheese

Instructions

  1. Set a skillet over medium heat and add the olive oil. When the olive oil is hot add the diced red pepper, yellow pepper, onion, zucchini, kosher salt, pepper, and crushed red pepper flakes. Cook 7 to 8 minutes, stirring occasionally.

  2. Add the garlic and balsamic vinegar and cook 2 to 3 more minutes.

  3. Lightly toast the Naan breads in the oven or toaster oven. Spread the hummus evenly on the toasted Naan bread.

  4. Top each Naan bread with the veggies and sprinkle evenly with goat cheese crumbles.
