Garlic Parmesan Salmon and Asparagus

Garlic Parmesan Salmon and Asparagus is not only a healthy and scrumptious recipe…it’s also a super simple six ingredient one pan wonder of a meal!

Salmon and asparagus are two very healthy ingredients that I still feel like are a big treat to eat.

Sometimes “healthy” things leave me feeling like there’s more to be desired.

But lucky for me (and maybe for you) these two are a healthy but indulgent delight.

How to make Garlic Parmesan Salmon and Asparagus

The garlic parmesan mayo is made by mixing together mayo, grated parmesan cheese, and garlic (kosher salt and pepper too).

I used garlic paste because I like simple, but mincing up some garlic cloves is great too.

This mixture will go on top of the salmon…but first we prepare the asparagus.

When you buy asparagus from the store, you need to trim the bottom inch or two.

It’s a little tough and not super yummy like the rest of this amazing veggie.

Once trimmed, toss it with olive oil, more garlic and parmesan, and kosher salt and pepper.

This meal is for four people, but my one pound of salmon I cut in two pieces.

Why? The bigger pieces of salmon will have the same cook time as the asparagus.

If they were smaller they would dry out a bit.

Lucky for me I was serving this to my family and they didn’t mind one bit that I cut the larger fillets in half as I served them.

On a lined baking sheet place the asparagus and salmon.

Then spoon the garlic parmesan mayo on the salmon.

Sprinkle some panko bread crumbs over top for some crunchiness.

And pat the panko crumbs slightly into the garlic parmesan mayo.

Garlic Parmesan Salmon and Asparagus

Bake this Garlic Parmesan Salmon and Asparagus in a 400 degree oven for 12 minutes.

Then, to crisp up the panko, turn the broiler to high for another 2 to 3 minutes.

I’m usually a saucy girl when it comes to just about anything.

But this one for me had the perfect flavor and no additional sauce needed 🙂

Garlic Parmesan Salmon and Asparagus

Ingredients

  • 1/4 cup mayo
  • 1/4 plus 1 Tbsp cup grated parmesan cheese
  • 1 1/2 Tbsps garlic paste or minced garlic
  • kosher salt, pepper
  • 1 pound asparagus
  • 1 Tbsp olive oil
  • 1 pound salmon (cut into two fillets)
  • 1/4 cup panko bread crumbs

Instructions

  1. In a small bowl, whisk together the mayo, 1/4 cup of the parmesan cheese, 1 Tbsp of the garlic, kosher salt, and pepper.

  2. Trim the bottom inch or two off of the asparagus and place in a bowl. Add olive oil, remaining 1 Tbsp parmesan cheese, remaining 1/2 Tbsp garlic, kosher salt, and pepper and toss the asparagus until it's evenly coated.

  3. Place the asparagus and salmon fillets (skin side down) on the same baking sheet, spread the garlic parmesan mayo over top. Sprinkle the panko bread crumbs over top of the salmon and pat them down slightly.

  4. Bake in a 400 degree oven on the middle rack for 12 minutes, then turn the broiler on high for an additional 2 to 3 minutes.
