Honey Balsamic Grilled Chicken is easy to make so it’s perfect for a busy weeknight.

This dish has such a simple marinade but brings lots of flavor to the chicken.

Especially if you marinate the chicken the night before.

I like to do as much prep work the night before so when I come home from work, I don’t turn into psycho, rushing-around-like-crazy mom 😉

It’s not my best side.

So if you do make the marinade overnight, dinner is ready in a flash with just a few minutes on the grill.

How to Make Honey Balsamic Grilled Chicken

Combine balsamic vinegar, honey, garlic, Italian seasoning, and dijon mustard in a bowl.

And whisk until it’s combined.

Put 6 to 8 boneless, skinless chicken thighs (or 4 breasts) in a gallon size plastic bag with about 3/4 of this marinade.

Then season the chicken with kosher salt, pepper, and crushed red pepper flakes.

Massage the bag until the chicken is coated and place in the fridge.

Fast forward to the next evening and we are ready to grill.

Somehow grilling doesn’t seem like actual cooking to me.

It’s so relaxing and a nice change from the kitchen sometimes.

Preheat your grill to medium high heat and place the chicken on the grill.

The chicken will cook for 4 to 6 minutes per side.

Brush with the leftover marinade during the last few minutes.

Now you get to dig into Honey Balsamic Grilled Chicken and enjoy!

As a side dish for this dinner might I suggest grilling some asparagus.

Brush with olive oil, salt, and pepper and grill for about 5 to 6 minutes.

If you’re lucky and have good weather this is a great dinner to enjoy outside on the patio!

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 Tbsps honey
  • 1 Tbsp dijon mustard
  • 1 Tbsp garlic paste
  • 1 Tbsp Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • 6 to 8 boneless, skinless chicken thighs (or 4 chicken breasts)

Instructions

  1. Put the balsamic vinegar, honey, dijon mustard, garlic, and Italian seasoning in a bowl and whisk until combined.

  2. Put the chicken in a gallon size plastic bag, season with kosher salt, pepper, and crushed red pepper flakes and add 3/4 of the honey balsamic marinade. Massage the bag until the chicken is coated. Marinate at least and hour or over night.

  3. Preheat the grill to medium high. Grill the chicken 4 to 6 minutes per side, brush the remaining honey balsamic mixture during the last few minutes.
