Grilled Greek Lemon Chicken

This healthy, complaint-free dinner recipe was brought to us courtesy of Grilled Greek Lemon Chicken.

“Mom! You need to make this chicken everyday!” were the words spoken by my son at dinner last night đŸ™‚

Making the kids happy at dinner is one of those mom challenges we all face, right?!

It’s a fairly simple dish and seriously has an incredible flavor thanks to the marinade, which also doubles as a dipping sauce.

Here’s how to make Grilled Greek Lemon Chicken…

A 5 ounce container of nonfat plain Greek yogurt and 5 ounces of mayo go into a container or bowl.

I put the yogurt in first and then used the yogurt container to measure out the mayo.

Then add a teaspoon each of dried dill, oregano, and garlic.

And 2 Tbsps of fresh lemon juice.

Mix it together until evenly combined.

Next put two pounds of boneless skinless chicken thighs into a gallon size bag along with a few spoonfuls of this yogurt sauce.

Massage the bag until evenly mixed and marinate in the fridge for a few hours or overnight.

So at this point you can refrigerate the rest of the sauce as is, or step it up a bit and mix in some crumbled feta cheese, which is what I did.

As my friend’s son says quite often…feta makes everything betta!

When ready, head out to the grill with your chicken, kosher salt, pepper, Naan or pita bread, and of course your mom juice đŸ˜‰

Make sure your grill grates are oiled to prevent sticking, and preheat to medium high and add the chicken.

Then sprinkle with kosher salt and pepper.

They take about 5 to 6 minutes per side, depending on the thickness of your chicken thighs.

Once the chicken thighs are done, remove them and grill the pita or Naan bread for a few seconds per side.

I brushed olive oil on both sides of the bread and also sprinkled with some kosher salt.

They don’t take long at all.

Serve the Grilled Greek Lemon Chicken with the yogurt sauce for dipping.

The chicken with the sauce and also the grilled Naan bread with the sauce makes for an unbelievable combo of flavors!

We served a simple salad on the side and it made for the perfect summer meal đŸ™‚

Ingredients

  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1 5 oz container nonfat plain Greek yogurt
  • 5 oz mayo
  • 2 Tbsps lemon juice
  • 1 tsp dried dill
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Optional: 2 to 3 oz crumbled feta cheese
  • kosher salt, pepper
  • Optional: grilled pita or Naan bread

Instructions

  1. Put the chicken thighs in a gallon size plastic bag.

  2. Add the Greek yogurt, mayo, lemon juice, dill, oregano, and garlic powder to a bowl and whisk until evenly mixed.

  3. Add a few spoonfuls of the yogurt sauce to the bag with the chicken and massage the bag until evenly combined. Marinate in the fridge several hours or overnight.

  4. Stir in 2 to 3 oz crumbled feta cheese to the yogurt sauce (if desired) and store sauce covered in the fridge.

  5. Preheat the grill to medium high heat, put the chicken on the grill and season with kosher salt and pepper. Grill 5 to 6 minutes per side, depending on thickness of the chicken.

  6. Serve with the yogurt sauce on the side for dipping and with grilled pita or Naan bread if desired.
