Grilled Greek Lemon Chicken has a great marinade and sauce with Greek yogurt, herbs, and lemon and grilled, best served with grilled pita or Naan

Ingredients
  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1 (5-ounce) container nonfat plain Greek yogurt
  • 5 ounces mayo
  • 2 tablespoons lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Optional: 2 to 3 ounces crumbled feta cheese
  • kosher salt, pepper
  • Optional: grilled pita or Naan bread
Instructions
  1. Put the chicken thighs in a gallon size plastic bag.

  2. Add the Greek yogurt, mayo, lemon juice, dill, oregano, and garlic powder to a bowl and whisk until evenly mixed.

  3. Add a few spoonfuls of the yogurt sauce to the bag with the chicken and massage the bag until evenly combined. Marinate in the fridge several hours or overnight.

  4. Stir in 2 to 3 ounces crumbled feta cheese to the yogurt sauce (if desired) and store sauce covered in the fridge.

  5. Preheat the grill or Blackstone griddle to medium heat, put the chicken on the grill pr griddle (with a little cooking oil) and season with kosher salt and pepper. Cook 5 to 6 minutes per side, depending on thickness of the chicken.

  6. Serve with the yogurt sauce on the side for dipping and with grilled pita or Naan bread if desired.
