Watermelon Candied Bacon Salad
I made some Traeger Bourbon Candied Bacon for our Mother’s Day brunch. So I used the leftovers to make this light, refreshing Watermelon Candied Bacon Salad recipe.
This salad is definitely going into our dinner rotation! Oh my word, it is amazing!
You could certainly make regular Candied Bacon if you don’t have a Traeger Grill/ Smoker.
Or even just bacon bits if you don’t want to use the candied.
How to Make Watermelon Candied Bacon Salad
This salad is dressed with a basil vinaigrette.
I used my smoothie maker, but you could use any blender or food processor.
Start by packing in a cup and a half of fresh basil leaves.
Then add in olive oil, red wine vinegar, garlic, sugar, kosher salt, and pepper.
Blend for about a minute and your dressing is ready.
I wanted this dressing to be on the thicker side, but if you want a thinner dressing just add more olive oil and vinegar.
Next step is assembling the salads.
I have field greens for my lettuce of choice.
Also, watermelon chunks, feta cheese, and the candied bacon.
Just look at it, SO good and really is the star of this salad.
Divide the lettuce between 4 bowls or plates.
Or containers if meal prepping.
The feta cheese crumbles go over top next for a nice saltiness to balance out the sweet watermelon.

Watermelon Candied Bacon Salad
Watermelon Candied Bacon Salad with basil vinaigrette and topped with feta cheese is a yummy and refreshing and easy to make summer salad
Ingredients
- 1 1/2 cups basil leaves
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 clove garlic
- 1 tsp sugar
- kosher salt, pepper
- 8 cups field greens (or lettuce of choice)
- 2 cups diced watermelon
- 6 oz crumbled feta cheese
- 12 slices candied bacon (your recipe or link to recipe in post above) crumbled
Instructions

Put the basil leaves, olive oil, vinegar, garlic, sugar, kosher salt, and pepper in a blender or food processor. Blend until mixed.

Divide the lettuce evenly between 4 plates or bowls and top with the diced watermelon, feta cheese, candied bacon crumbles, and top each with the basil vinaigrette.
