Crispy Baked Lemon Pepper Chicken
Crispy Baked Lemon Pepper Chicken is an awesome, easy dinner recipe that only has four ingredients.
Everyone in my house LOVED it, including my picky teen (always a bonus).
Someone asked me not too long ago what my favorite recipe on my blog was.
The first one that came to mind was my Crispy Baked Cajun Chicken Thighs.
It’s basically the same recipe as this, only with a different seasoning.
It follows the same secret trick to getting the skin super crispy in the oven.
Since I had some lemon pepper seasoning leftover from making Lemon Pepper Chicken Wings a few weeks ago, I thought to give it a whirl on some chicken thighs last night.
How to make Crispy Baked Lemon Pepper Chicken
The first part of the secret trick is mixing your seasoning with some baking powder.
Then rubbing it over the chicken.
The baking powder doesn’t add flavor, but it does draw out the moisture in the chicken skin.
Which makes it super crisp as it bakes.
My lemon pepper seasoning had salt in it already, so I only used a tiny bit of salt and a little extra pepper.
Another part of the trick to getting that extra crisp skin is placing the chicken on a wire baking rack over a lined baking sheet.
Then starting it in a 475 degree oven for the first 15 minutes.
After fifteen minutes drop the heat to 425 degrees and continue baking for another 30 minutes.

As you can see, it’s a good idea to line that baking sheet for easy cleanup.
Crispy Baked Lemon Pepper Chicken is really that simple!
We had ours with some frozen french fries that I cooked in the air fryer and my son’s all time favorite Velveeta Shells and Cheese.

Crispy Baked Lemon Pepper Chicken
Super crispy chicken skin with a lemon pepper seasoning
Ingredients
- 2 pounds chicken thighs (4 to 6 thighs)
- 1 1/2 Tbsps lemon pepper seasoning
- kosher salt, pepper
- 1 tsp baking powder
Instructions

Pat both sides of the chicken thighs dry with paper towels.
Note: If you prefer less skin, trim the excess skin on the bottom of each thigh using kitchen scissors leaving just the skin on the top.

Combine the lemon pepper seasoning, kosher salt, pepper and baking powder. Rub on both sides of the chicken thighs. Sprinkle more lemon pepper seasoning over top if desired.
Note: Check to see if your lemon pepper seasoning has salt in it already, if so go light on any extra salt.

Place the chicken skin side up on a wire rack over a lined baking sheet. Put in a 475 degree oven for 15 minutes. Reduce the oven temp to 425 and cook for an additional 30 minutes.
