Smoked Curry Chicken Thighs

Smoked Curry Chicken Thighs were on the dinner recipe list this week, and they were every bit as fabulous as they sound!

It’s no secret how obsessed I am with my Traeger pellet grill/smoker.

I’m not even ashamed, and my family is quite pleased with this obsession of mine.

They get to have delicious smoked food on a regular basis 🙂

Marinating the chicken thighs overnight is key.

I’ve made these before with a quick marinade, just not quite the same as if they marinate overnight.

Here is how to make Smoked Curry Chicken Thighs

Five to six pounds of bone in, skin, on chicken thighs go into a gallon size plastic bag.

I like to trim extra skin if needed before placing them in the bag.

It’s a tight fit, but mine fit perfectly with little room to spare.

Then whisk up the marinade, which is soy sauce, honey, curry paste, curry powder, garlic, ginger, and either sesame or vegetable oil.

Once the marinade is evenly combined, pour it into the bag with the chicken and massage until evenly coated.

Next place the bag in the fridge overnight.

Massaging the bag a few times throughout those 24 hours and turning it helps to marinate evenly.

I like to take the bag out of the fridge about an hour before smoking them so the chicken comes to room temp.

Set the smoker to 250 degrees and place the chicken in the smoker.

These will go for about 2 1/2 to 3 hours total.

I flipped mine after 1 1/2 hours.

Smoked Curry Chicken Thighs

Let them smoke another 1 to 1 1/2 hours after flipping them.

You know they are done with the internal temp is 170 degrees.

Smoked Curry Chicken Thighs were served at our house with some fried rice, which went perfectly together!

We even had some chicken leftover so the next night I chopped up the chicken (bone removed of course) and made nachos!

I mixed some soy sauce, curry powder, and ginger with sour cream to top them and OH MY GOODNESS…

Excellent way to use leftovers 🙂

Smoked Curry Chicken Thighs

Smoked Curry Chicken Thighs are marinated overnight in soy sauce, honey, and spices then smoked for a flavorful and delicious meal!

Ingredients

  • 5 to 6 pounds bone in, skin on chicken thighs (approx 10 thighs)
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 1/2 Tbsps curry paste
  • 1 1/2 Tbsps curry powder
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp ginger paste or minced ginger
  • 1 Tbsp sesame oil or vegetable oil

Instructions

  1. Trim any extra skin from the chicken thighs if needed. Place the thighs in a gallon size plastic bag.

  2. Add the soy sauce, honey, curry paste, curry powder, garlic, ginger, and oil to a bowl and whisk until evenly mixed.

  3. Pour the sauce into the bag with the chicken and massage until evenly mixed. Place the bag in the fridge for 24 hours, massage and turn the bag a few times as it marinates.

  4. Set your smoker to 250 degrees and place the chicken in the smoker. Smoke them 1 1/2 hours and flip them over, smoke another 1 to 1 1/2 hours until the temp is at 170 degrees.
