Smoked Jalapeno Brined Chicken Wings
As I planted my garden, I also had some Smoked Jalapeno Brined Chicken Wings going on the Traeger pellet grill/ smoker 🙂
It’s the end of May…the time of year when the kids are out of school and the weather is nice and warm.
Time to get that garden planted.
And the PERFECT time around here to start using the smoker on a regular basis.
How to Make Smoked Jalapeno Brined Chicken Wings
These are 3 pounds of jumbo split fresh wings.
They brine overnight in a mixture of jalapeno juice and sugar.
We go through pickled jalapenos around here pretty often, we just save the pickling juice to use for the wings.
Once they have brined overnight in the fridge lay them on a tray lined with paper towels.
Then pat them dry with more paper towels.
Sprinkle all sides lightly with season salt and that’s it!
Now they are ready for the Traeger pellet grill or smoker!
Set it to 250 degrees and let them smoke away for about 2 and a half hours, turning halfway through.
They get nice and golden in color, with a few charred edges (my favorite part)!
These weren’t as spicy as you would think.
I think the spiciness may depend on the brand of pickled jalapenos you use.
They had just a hint of the pickled jalapeno and a slight kiss of sweetness from the sugar.
The brine makes them fall right off the bone!

Smoked Jalapeno Brined Chicken Wings
This unique and flavorful brine makes these chicken wings amazingly delicious and juicy!
Ingredients
- 3 pounds jumbo split chicken wings
- 2 cups jalapeno juice (liquid left in a jar of pickled jalapenos)
- 1/2 cup sugar
- season salt
Instructions

Place chicken wings in a gallon size plastic bag. Pour jalapeno juice into the bag, enough that the wings are completely covered. Add sugar into the bag and mix until dissolved. Place the chicken into the fridge for at least 24 hours.
Note: Recommended to place the bag in a large bowl or container in case of a leak.

After 24 hours, remove the chicken wings from the bag and place on a tray lined with paper towels. Pat them dry with more paper towels. Sprinkle all sides with season salt.

Put the chicken wings into a smoker set at 250 degrees for 2 and a half hours. Sprinkle with more season salt if desired. Check with a thermometer, they should be at 170 degrees.
Note: These can also be baked in a 425 degree oven for 40 minutes.
