Grilled BBQ Chicken Salad with Avocado Ranch was our perfect dinner and bonus… also lunch for the next day with a meal prep option.
I feel like it’s been awhile since I made a super fun salad with a light homemade dressing.
Dinners like these just make you feel good!
So many fresh ingredients and pretty colors does wonders for anyone’s mood.
How to make Grilled BBQ Chicken Salad with Avocado Ranch
I marinated chicken breasts in a gallon size plastic bag with some store bought BBQ seasoning, olive oil, and apple cider vinegar.
You can marinate this for at least an hour, or even overnight in the fridge.
Before grilling the chicken and corn, I made a light, homemade dressing in the blender.
A container of nonfat plain Greek yogurt, a large avocado, fresh cilantro, milk, ranch seasoning, lime juice, kosher salt, and pepper go into the blender.
Then blend until evenly mixed.
The lime will help prevent the avocado from browning.

Next brush some ears of corn on the cob with olive oil and more of the store bought BBQ seasoning.

Now you are ready to grill the corn and chicken.
Heat the grill to medium and these will take around 10 minutes, flipping halfway though.
Thicker chicken may take a little longer.

Heck, just serving THIS for dinner would be fabulous!

As the chicken and corn are cooling, go ahead and divide up some chopped romaine lettuce between four plates or containers (if meal prepping).
Add whatever salad toppings your heart desires.
We went with shredded cheese and sliced grape tomatoes.
Chop the chicken and cut the corn from the cob and add to the salads along with the homemade avocado ranch dressing.

Grilled BBQ Chicken Salad with Avocado Ranch
Grilled BBQ Chicken Salad with Avocado Ranch has grilled BBQ chicken and corn served over lettuce with a light cilantro lime avocado ranch dressing!
Ingredients
Grilled BBQ Chicken Salad
- 1 1/2 pounds chicken breasts
- 1 1/2 Tbsps olive oil
- 1 Tbsp apple cider vinegar
- 2 1/2 Tbsps BBQ seasoning
- 4 ears corn on the cob shucked
- 3 hearts romaine lettuce chopped
- 1 cup shredded cheese of choice
- 1 cup cherry or grape tomatoes cut in half
Cilantro Lime Avocado Ranch Dressing
- 1 5.3 oz container Nonfat plain Greek yogurt
- 1 large avocado
- 1 cup fresh cilantro (approx half of the bunch)
- 1/2 cup milk (or buttermilk)
- 1 1/2 Tbsps fresh lime juice
- 1 Tbsp dry ranch seasoning
- kosher salt, pepper
Instructions
Grilled BBQ Chicken Salad

Put the chicken breasts in a gallon size plastic bag. Add 1 Tbsp of the olive oil, apple cider vinegar, and 2 Tbsps of the BBQ seasoning. Massage the bag until evenly mixed and marinate at least 1 hour or overnight in the fridge.

Brush the corn on the cob with remaining 1/2 Tbsp olive oil and sprinkle with remaining 1/2 Tbsp BBQ seasoning.

Heat your grill to medium heat and place the chicken and corn on the grill. Grill 10 minutes total, turn the corn and flip the chicken halfway through.
Note: Thick chicken breasts may need a few more minutes to cook, mine were medium thickness.

Remove from grill and let cool slightly. As the chicken and corn cool divide the lettuce between 4 plates or containers

. Top each with cheese and tomatoes. Dice the chicken and slice the corn off the cob. Add the chicken and corn to the salads. Serve with Cilantro Lime Avocado Ranch Dressing.

Add all ingredients to a food processor or blender. Blend until evenly mixed. Serve with the Grilled BBQ Chicken Salads.
