Grilled Steak Salad

For this summery Grilled Steak Salad recipe I used skirt steak, grilled corn, avocado, gorgonzola, and tomatoes.

I could eat a good salad every day and not get bored.

There are so many combinations of fresh ingredients to choose from!

I made my light balsamic dressing by simply combining light mayo, balsamic vinegar, and sugar.

Skirt steak is a very thin cut of meat, I only grilled it about 2-3 minutes per side.

Now this skirt steak came already seasoned, but I would have used olive oil, salt, and pepper if it wasn’t already seasoned.

You could obviously use any steak that you prefer.

Since I was already grilling the steak, I thought why not grill the corn also?!

A quick drizzle of olive oil, some kosher salt and pepper, and just about 10 minutes on a medium to medium high grill for the corn.

Timing a meal that everything is done at the same time is something I always think about.

I started the corn and added the steak after about 5 minutes.

Then cooked it another 5 minutes, turning the steaks halfway through.

That way everything was done at the same time đŸ™‚

Making the Grilled Steak Salads

As the corn and steaks cooled a bit, I prepared the salads.

My son just ate the steak, corn, tomatoes, and a plain avocado.

He likes salad, but not this type of lettuce and I’m not about to fight with a kid who was willing to eat just about everything else.

So, just my husband and I ate these.

I divided the lettuce between two plates for our dinner, and two containers to make salads for tomorrow’s lunch.

Then added the gorgonzola cheese (which is similar to blue cheese, but milder in flavor), cherry tomatoes, and avocado slices.

And cut the skirt steak against the grain and sliced the corn off the cob and added those to the salads.

This salad is served with a light balsamic dressing and it’s absolutely gorgeous and amazingly delicious!

Grilled Steak Salad

Ingredients

For the Light Balsamic Dressing

  • 3/4 cup light mayo
  • 2 Tbsps balsamic vinegar
  • 1 Tbsp sugar

For the Grilled Steak Salad

  • 1 pound skirt steak (or steak of choice)
  • 4 ears corn
  • 8 oz bag baby spring mix (or lettuce of choice)
  • 2 avocados sliced
  • 4 oz gorgonzola cheese
  • 1 pint cherry tomatoes cut in half

Instructions

For the Light Balsamic Dressing

  1. Whisk all ingredients together and set aside.

For the Grilled Steak Salad

  1. If skirt steak is not already seasoned, drizzle with olive oil and sprinkle with kosher salt and pepper. Also drizzle corn with olive oil and sprinkle with kosher salt and pepper.

  2. Preheat the grill on medium to medium high heat and place the corn on the grill, turning every few minutes. After 5 minutes add the steak. Grill the steak 2 and a half minutes per side. (Total corn cook time 10 minutes, total steak cook time 5 minutes)

  3. Let the steak and corn cool as you prepare the salads. Divide lettuce between 4 plates (or containers if meal prepping). Place avocados, cheese, and tomatoes onto the lettuce. Slice steak and cut the corn off the cob and add to the salad. Drizzle with light balsamic dressing.
