How to Make Air Fryer Shrimp Zucchini and Peppers
The first step is peeling and deveining a pound of jumbo shrimp, then patting them dry with paper towels.
Next up is chopping the zucchini and peppers. I tried to get them around 1/4 inch thick.
The veggies go into a bowl with the shrimp.
Then add olive oil, grated parmesan cheese, garlic, kosher salt, pepper, and Italian seasoning.
I love using garlic paste, so easy and you can find it in the fresh herb section of the store.
Give it a toss with some tongs until evenly mixed.
This did take me about a minute or so to make sure all the veggies and shrimp had an even amount of seasoning.
This mixture will fit perfectly in a 5.8 quart air fryer.
Try to get it spread as even as possible with some overlapping.
If you happen to have a smaller air fryer, no worries…just make this in two separate batches 🙂
Set the air fryer to 390 degrees for 15 minutes, and shake the basket halfway through cooking.

Air Fryer Shrimp Zucchini and Peppers
Air Fryer Shrimp Zucchini and Peppers has a fabulous garlic parmesan seasoning and air fried to perfection for an amazing light and yummy meal!
- 1 pound jumbo shrimp peeled and deveined
- 1 zucchini
- 1 red bell pepper
- 1 Tbsp olive oil
- 1 Tbsp garlic paste or fresh minced garlic
- 1 Tbsp Italian seasoning
- 1/4 cup grated parmesan cheese
- kosher salt, pepper
Pat the shrimp dry with paper towels and place in a large bowl.
Slice the zucchini into 1/4 inch rounds and cut the red pepper into 1/4 inch slices. Place them in the bowl with the shrimp.
To the bowl add the olive oil, garlic, Italian seasoning, grated parmesan, kosher salt, and pepper. Toss until evenly mixed.
Place the shrimp and veggies into the air fryer basket (this fits perfectly in a 5.8 quart air fryer, if yours is smaller cook in two smaller batches). Set the air fryer to 390 degrees for 15 minutes, shake the basket halfway through cooking.
Serve as is or over buttered noodles or fettuccini alfredo.
