Weekly Meal Plan January 5

I don’t know about you, but I basically ate my way through the holidays. This week I am going with some healthy dinner recipes.

Everyone has their own version of exactly what is “healthy”.

For me I don’t go overboard, I just cut out some fat and calories ands try to use fresh ingredients.

If I went super strict on a clean eating plan it wouldn’t last long…I know myself 😉

So this week is my version of a healthy meal plan.

Plus these healthy dinner recipes come with a meal prep option for healthier lunches or leftovers for dinner.

Old Bay Shrimp Cauliflower Rice Bowls

This one has fresh veggies (healthy), shrimp (healthy), cauliflower rice (healthy), and a spicy old bay mayo (meh…a slight splurge but SO worth it).

It also has a meal prep option to help you stay on track and out of the fast food drive thru.

And if you aren’t a fan of cauliflower rice simply substitute regular rice.

Personally I love those Uncle Ben’s Ready Rice pouches that you microwave for 90 seconds.

The Jasmine rice is my favorite 🙂

Skinny Greek Chicken Salad

Skinny is in the name of this delicious chicken salad, so it has to be good!

It uses light Greek yogurt, shredded chicken, and lots of healthy Mediterranean ingredients.

I like to wrap it in a low carb tortilla.

Mediterranean Fried Cauliflower Rice

This is your BONUS recipe this week!

Why?

Because you may have some leftover mediterranean ingredients from the chicken salad, so why not put them to good use and make an extra meal or meal prep.

Light Zuppa Toscana Soup

Your fun weekend recipe is a soup.

I absolutely LOVE soup making afternoons when there’s no rush to put dinner on the table right away. This recipe is a lightened up version of Olive Garden’s Zuppa Toscana.

It still has some bacon, turkey sausage instead of regular, and not nearly as much cream as the original.

Still a slight splurge, but hey…it’s the weekend!
