I just got back from Disney World!!! What does this have to do with a recipe for Skinny Greek Chicken Salad you may be asking yourself?

Well…I ate A LOT in Disney World, and enjoyed every bit of deep fried yumminess, ice cream cones stacked a mile high, and don’t even get me started on the Mickey shaped waffles!

This girl needs some light and healthy foods in her life after all that 🙂

Skinny Greek Chicken Salad

In a bowl combine some shredded cooked chicken along with feta cheese, kalamata olives, sun dried tomatoes, and cucumber.

The shredded chicken is part of my Simple Shredded Chicken for Meal Prep that I make almost weekly.

You could also get a rotisserie chicken from the store and shred that up.

Skinny Greek Chicken Salad

The “skinny” part of this Greek chicken salad comes from the fact that I use nonfat Greek yogurt mixed with juuuuust a little light mayo.

Skinny Greek Chicken Salad

A pop of color from the fresh basil will make you feel even better about eating this Skinny Greek Chicken Salad.

I served this with grilled Naan bread, but you could also serve with grilled pita.

Seriously I tried not to eat too much of the bread, didn’t want to cancel out the “skinny” part of this dish 😉

Ingredients

  • 3 cups cooked, shredded chicken
  • 1 (5.3 oz) container nonfat, plain Greek yogurt
  • 1/4 cup light mayo
  • 3/4 cup diced cucumber
  • 1/2 cup chopped kalamata olives
  • 1/2 cup sliced sun dried tomatoes
  • 1/2 cup crumbled feta cheese
  • kosher salt, pepper
  • Optional: fresh basil leaves
  • Optional: grilled pita or Naan bread

Instructions

  1. In a large bowl combine the cooked, shredded chicken with the Greek yogurt, light mayo, cucumber, olives, sun dried tomatoes, and feta cheese. Stir until evenly combined.

  2. Taste for seasoning and add kosher salt and pepper according to your taste.

  3. Serve with fresh basil on top and with grilled pita or Naan bread if desired.
