Avocado Chicken Salad Wraps

My seven year old suggested we call this recipe “Hulk Wraps” because of the gorgeous, green color. đŸ™‚ I went with “Avocado Chicken Salad Wraps” instead, even though his was a much cooler name.

Whatever you call them, they are a healthy, easy, and very tasty meal.

It’s basically everything in a traditional chicken salad.

Only instead of mayo, you use avocado to bring all the ingredients together into a delicious, creamy chicken salad.

We had some leftover whole chickens that we put in the smoker for a party.

So I shredded those up to use in this chicken salad.

Rotisserie chicken at the store is what I would have used if I didn’t already have some left over.

Here’s how to make Avocado Chicken Salad Wraps…

Into a large bowl goes 4 cups shredded chicken, finely diced celery, red onions (which I cooked slightly,

I just am not a fan of raw red onion).

Also cilantro, 2 avocados, some lime juice, kosher salt, and pepper.

The lime juice adds amazing flavor, but it also prevents the avocados from turning brown.

Combine everything and you have this gorgeous chicken salad (confession, I could not stop picking at it as I made them đŸ˜‰ )

Avocado Chicken Salad Wraps

You could serve this chicken salad on crackers, toast, bagel thins, or just eat it as is.

I went with a wrap.

I am absolutely, positively obsessed with Ole Xtreme Wellness Low Carb Tortilla Wraps (and no, they do not pay me to say that, they really are the best).

You can use any other tortilla or wrap that you prefer.

I start with some large pieces of lettuce and then fill as much as I could fit in the center of each tortilla.

Wrap these suckers up and enjoy every…single…bite!

We ate them with fresh fruit and pretzels, scooping up what falls on your plate with pretzels is highly recommended đŸ˜‰

This recipe makes 4 wraps, but I only needed to make 3 for dinner (darn teenager is never home anymore).

So I saved the remaining chicken salad in a container and made myself a wrap for lunch the next day.

Remember, avocado will brown, but the lime juice prevents most of the browning.

There was only one little brown spot when I took it out of the fridge the next day, so I would assume eat within 24 hours if you have leftovers.

Ingredients

  • 4 cups shredded rotisserie chicken
  • 1/2 cup red onions finely diced, raw or cooked (your preference)
  • 1/2 cup celery finely diced
  • 1/2 cup cilantro chopped
  • 2 avocados pits removed and scooped out of skin
  • juice of 1 lime
  • kosher salt and pepper
  • 4 Ole Xtreme Wellness Low Carb Tortillas or tortilla of choice
  • iceberg lettuce

Instructions

  1. In a large bowl combine chicken, red onions, celery, cilantro, avocados, lime juice, kosher salt and pepper. Mix together and taste for seasoning. Add more kosher salt and pepper if needed.

  2. Lay the tortillas flat, put lettuce on top of tortillas, then place avocado chicken salad in the center of each tortilla on top of the lettuce. Roll up and serve.
