Chicken Bacon Avocado Quesadillas

These are a genius way to use up leftovers too, which was the case in this recipe for Chicken Bacon Avocado Quesadillas.

Quesadillas are such a fun and easy dinner idea, but I feel like I kinda forget about them more than I should.

[Mental note…make more quesadillas 😉 ]

I had some leftover grilled chicken, and what better way to use it than combining with cheese, bacon, and avocado!

You could also make my Simple Shredded Chicken for Meal Prep to use for these as well.

Making quesadillas in a skillet is my favorite way.

How to Make Chicken Bacon Avocado Quesadillas

I had the chicken already, so I made some bacon in a skillet over medium heat.

It just takes a few minutes, then set on paper towels to absorb excess grease.

Just set a large skillet over medium low heat with olive oil and lay a large burrito size tortilla flat.

Then build the toppings on one side of the tortilla.

For these add some cheese and the cooked chicken first.

Then cooked and crumbled bacon goes over top.

Half of an avocado, which you’ll want to slice right before placing it so it doesn’t brown.

Then more cheese over top and fold the empty side over the filled side.

After a minute or two per side it’s crispy golden brown on the outside and with melty gooey cheesy goodness on the inside!

You can dip your Chicken Bacon Avocado Quesadillas in ranch or sour cream if you like.

The best part about these in my opinion is the combo of the creamy avocado with the salty, crispy bacon…yum!

Chicken Bacon Avocado Quesadillas

Ingredients

  • 2 Tbsps olive oil
  • 4 burrito size soft tortillas
  • 3 cups shredded cheese of choice
  • 3 cups cooked, diced chicken
  • 4 slices bacon cooked and crumbled
  • 2 avocados sliced
  • Optional: ranch dressing or sour cream for dipping

Instructions

  1. In a large skillet over medium low heat, pour 1/2 Tbsp olive oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.

  2. On one side of the tortilla add some cheese, chicken, bacon crumbles, half of an avocado (sliced), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.

  3. Remove from pan and repeat with the remaining ingredients. Makes 4 quesadillas. Serve with ranch dressing or sour cream if desired.
