
Chicken Bacon Avocado Quesadillas are a fun and easy dinner idea that the whole family will love, made even easier if using my meal prep chicken!
Set a large skillet or your Blackstone griddle over medium low heat and add some olive oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet, or all of the tortillas on your griddle.
On one side of each tortilla add some cheese, chicken, bacon crumbles, half of an avocado (sliced), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.
Remove from pan or griddle and repeat with the remaining ingredients if using a skillet. Makes 4 quesadillas. Serve with ranch dressing or sour cream if desired.
