Blackstone Sausage and Pepper Quesadillas
Today I share with you…drum roll please…a Blackstone Sausage and Pepper Quesadillas recipe:)
Magic happens when you combine classic sausage and peppers with the cheesy goodness of a quesadilla, friends.
These sausage and peppers are incredible by themselves, served as a sub with melty cheese, but there’s just a little somethin’ somethin’ about the crispy tortilla factor.
And the fact that each quesadilla piece is like a little hand held package, easily dipped in some marinara sauce.
And it’s all easily made on the Blackstone griddle, which I may or may not be slightly addicted to 😉
How to Make Blackstone Sausage and Pepper Quesadillas
The first step is setting out the sausage and veggies.
I have already cooked Italian chicken sausage, mushrooms, two bell peppers (use any color you prefer), onion, and garlic.
Slice and dice and mince all this yumminess and place it all on a tray or baking sheet.
This makes for easy transferring from the kitchen to your outside patio…or wherever your Blackstone griddle lives 🙂
Preheat the griddle to medium high heat for several minutes.
Then add some oil of choice (I use vegetable oil), and the sausage and veggies.
Season with Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.
Using hibachi spatulas, flip and mix this a few times as it cooks.

Should take about 8 to 10 minutes.
Lower the griddle heat to about medium and move the sausage and veggies to one side.
Add a bit more oil and lay some large burrito size tortillas flat.
Put two slices of provolone cheese on one side of each tortilla.
Then use the hibachi spatulas to put a mound of the delicious sausage and veggies over top.
More cheese over top.
And then use the spatulas to fold the empty side of the quesadilla over the filled side.
Cook a minute or two per side or until the cheese is ooey gooey melted to perfection!
Serve Blackstone Sausage and Pepper Quesadillas with marinara sauce… ohhhh and banana peppers!
Cut the quesadillas into smaller pieces for more of a hand held version.
Or serve them whole with a knife and fork.
Either way you’ll be amazed at how tasty these are and fabulous combo of flavors!

Blackstone Sausage and Pepper Quesadillas
Blackstone Sausage and Pepper Quesadillas are a super easy Blackstone griddle recipe, Italian sausage and peppers make perfect quesadillas
Ingredients
- 1 pound Italian sausage links (mine were already cooked chicken sausage)
- 2 bell peppers of choice (I used a yellow and orange)
- 1 onion
- 6 oz mushrooms
- 4 cloves garlic
- 1 Tbsp Italian seasoning
- kosher salt, pepper, crushed red pepper flakes
- vegetable oil for the griddle
- 4 large burrito size tortillas
- 16 slices provolone cheese
- Optional: marinara sauce for dipping, banana peppers
Instructions

Slice the Italian sausage into 1 inch pieces.
Note: If your Italian sausage is not already cooked, cook 4 to 5 minutes per side in a skillet or on the Blackstone griddle set to medium heat. Let cool before slicing.

Slice the bell peppers, onion, and mushrooms. Peel and mince the garlic. Put all the sliced veggies and sausage on a tray. Season with Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.

Preheat the Blackstone griddle to medium high heat. Once hot add vegetable oil and all of the seasoned veggies and Italian sausage.

Cook 8 to 10 minutes, flipping and stirring a few times. Then move the sausage and veggies to one side of the griddle.
Note: This works best with two hibachi spatulas.

Lower the griddle heat to medium and add more vegetable oil to the empty space of the griddle and place the tortillas flat.

Place two slices of the cheese on one side of each tortilla, then use the spatulas to put some sausage and veggies over the cheese, add two more slices of cheese over the sausage and veggies. Use the spatulas to fold the empty side of the tortillas over the filling.

Flip the quesadillas and remove from the griddle once the cheese is melted and tortillas are cooked to your liking.

Serve with marinara sauce for dipping and banana peppers if desired.
