BBQ Pulled Pork Quesadillas

BBQ Pulled Pork Quesadillas were last night’s leftover pork recipe creation, and they are a definite do again!

Whenever I make BBQ Pulled Pork on the smoker, we usually have TONS of leftovers.

It makes it a fun challenge for me to come up with creative ways to use these leftovers.

It’s perfectly ok if you’re questioning how exciting my life is based on the fact that leftover pork is actual fun for me 😉 .

In addition to these quesadillas, I also made Smoked BBQ Pork Stuffed Jalapenos with this gorgeous leftover pulled pork.

How to make BBQ Pulled Pork Quesadillas

I have made quesadillas in the oven many times, but for these quesadillas I prefer making in my giant cast iron skillet or Blackstone griddle over medium to medium low heat.

Some olive oil goes into the pan and then a large burrito size tortilla.

On one side of the tortilla goes cheese, pulled pork, and BBQ sauce.

I also like to add some pickled jalapenos and a little more cheese on top.

If you make Sweet Pickled Red Onions, those are even better!

Unfortunately we ate ours already on some nachos last week (mental note: make more pickled onions).

The cheese I am using is Monterey Jack, but cheddar would work perfectly fine too.

BBQ Pulled Pork Quesadillas

Once the filling is added, fold the empty side of the tortilla over the filled side and let it cook and melt to perfection for about 2 minutes per side.

If you’re lucky the cheese will melt out into the pan and get nice and crispy.

I made a sour cream sauce to drizzle over top of these BBQ Pulled Pork Quesadillas.

It is just sour cream, chili powder, and balsamic vinegar mixed together and it created a tangy sauce that paired perfectly with the BBQ.

BBQ Pulled Pork Quesadillas

A creative and delicious way to use leftover pulled pork

Ingredients

BBQ Pulled Pork Quesadillas

  • 2 Tbsps olive oil
  • 4 burrito size flour tortillas
  • 3 cups shredded Monterey Jack cheese
  • 3 cups leftover BBQ pulled pork
  • 1/2 cup BBQ sauce
  • 1/4 cup pickled jalapeno slices (optional)

Sour Cream Sauce

  • 1/2 cup sour cream
  • 1 Tbsp balsamic vinegar
  • 1 tsp chili powder

Instructions

BBQ Pulled Pork Quesadillas

  1. In a large skillet or griddle over medium low heat, pour 1/2 Tbsp olive oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.

  2. On one side of the tortilla add some cheese, pork, BBQ sauce, jalapenos (if using), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes

  3. Remove from pan and repeat with the remaining ingredients. Makes 4 quesadillas. Serve with Sour Cream Sauce if desired.

    Note: If using a griddle you can make them all at once.

Sour Cream Sauce

  1. Mix ingredients in a bowl, stir until evenly combined. Serve with the quesadillas.
