
A creative and delicious way to use leftover pulled pork
In a large skillet or griddle over medium low heat, add a little cooking oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet or all the tortillas if using a griddle.
On one side of each tortilla add some cheese, pork, BBQ sauce, jalapenos (if using), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes
Remove from pan and repeat with the remaining ingredients. Makes 4 quesadillas. Serve with Sour Cream Sauce if desired.
Note: If using a griddle you can make them all at once.
Mix ingredients in a bowl, stir until evenly combined. Serve with the quesadillas.
