Taco Quesadillas
Taco Quesadillas are quick, easy, delicious, and the whole family loves this easy recipe.
Which means you don’t have to hear any complaints at dinner 😉
This is one of those dream dinners that can be a busy mom’s best friend.
I made mine with ground turkey instead of ground beef which cuts a few calories.
Ground venison would also be a nice choice if you have some.
How to Make Taco Quesadillas
I cooked the ground turkey in a skillet and added a packet of taco seasoning.
If you have a homemade taco seasoning that would be even better.
Sometimes I just get lazy and take the help from the store bought ingredients.
In another skillet over medium low heat just drizzle some olive oil and lay a burrito size tortilla flat in the skillet.
You could also make these on the Blackstone Griddle or Flat Top Grill, just preheat the medium low for a few minutes 🙂
Add some shredded cheese to one side, some of the taco meat, and then more cheese.
Gotta love lots of melty cheese in your taco quesadillas!
Just flip the empty side of the tortilla over the filled side and cook for a minute or two.
Then carefully flip it over with a spatula and let it cook another minute or two.
You could serve these Taco Quesadillas just like this, or add whatever toppings you like.
We added lettuce and sour cream.
My husband broke out the pickled jalapenos and hot sauce to add some heat to his.
Salsa would be a nice topping as well.
Instead of Taco Tuesday we can call it Quesadilla Tuesday, right?!

Taco Quesadillas
A fun spin on traditional taco night that the whole family will love
Ingredients
- 1 pound ground beef or ground turkey
- 1 packet taco seasoning
- olive oil
- 6 burrito size tortillas
- 3 cups shredded cheese
- Optional toppings: shredded lettuce, sour cream, salsa, hot sauce
Instructions

In a skillet over medium heat, or on the griddle, add the ground beef or turkey, cook for 5 minutes and break up the meat as it cooks. Add the packet of taco seasoning and cook according to the package directions.

In a large skillet over medium low heat, or preheat the griddle to medium low for a few minutes. Add some olive oil and lay a tortilla flat. On one side sprinkle some cheese, then some of the taco meat, and more cheese. Fold the empty side of the tortilla over the filled side. Cook a minute or two, then flip and cook another minute or two.

Repeat with remaining ingredients. Serve with toppings such as shredded lettuce, sour cream, salsa, or hot sauce.
