Monte Cristo Quesadillas
Monte Cristo Quesadillas are a busy mom’s best friend, and can be made in a skillet or all at once on your Blackstone griddle!
You want to talk about a super easy dinner recipe that even the kids will love (aka-not complain about 😉 )?!
Traditionally Monte Cristo sandwiches are ham and Swiss cheese sandwiches grilled on French toast, sprinkled with powdered sugar and served with jam.
How to Make Monte Cristo Quesadillas
It starts with a milk and egg wash brushed onto just one side of a large flour tortilla.

The tortilla goes egg side down into a skillet or your Blackstone griddle over medium-low heat with melted butter.
Then just place some ham and swiss cheese slices on one side of the tortilla.

Next fold the empty side of the tortilla over top of the ham and cheese side.
I used a spatula to fold it over and it was pretty easy.

From here it’s just a minute or two per side and it’s done 🙂
Then repeat to make the remaining quesadillas or make them all at once on the griddle.
Serve with powdered sugar sprinkled over top and some blackberry or strawberry jam for dipping.
Monte Cristo Quesadillas are super good reheated too and make a perfect lunch the next day if you have leftovers!
