Maple Bacon Breakfast Pizzas

These Maple Bacon Breakfast Pizzas were a perfect recipe because they use up some leftover bagel thins I had.

When I plan meals for the week I try to use similar ingredients so nothing goes to waste.

I planned to make Muenster Turkey Melts with Bacon this past week.

And when I made the bacon for the turkey melts, I just doubled it.

Then saved the cooked bacon for this dish.

Work smarter, not harder…right?!

And plus, everyone loves maple bacon breakfast pizzas for dinner!

As a mom, some days I have all the patience in the world and let my kids cook with me and teach them new kitchen skills.

But…some nights I just want to get dinner done quickly and then go and relax!

The later was how I was feeling this evening, tired from work and kind of grouchy.

But I seriously could not say no when my 7 year old asked if he could help.

I’m actually glad I said yes because we had a lot of laughs teaching him how to crack an egg.

It didn’t go well at first I will say ;).

He actually made this dish start to finish with only a little help from me.

So if he can do it so can you 🙂

Toast 4 bagel thins and lay them cut side up on a baking sheet.

Top with scrambled eggs.

He did a great job with this and just look at those little hands!

Drizzle some maple syrup over top of the eggs.

Yes, it sounds weird but the little bit of sweetness is SOOOO good.

Then top each with a slice of cheese and some cooked and crumbled maple bacon.

Into a 375 degree oven for only 5 to 7 minutes and they are melted to perfection!

The combo of the sweetness from the syrup with the salty bacon and eggs is probably my favorite part of this breakfast-for-dinner dish.

My son was so proud when we called everyone to dinner since he made Maple Bacon Breakfast Pizzas himself 🙂

Maple Bacon Breakfast Pizzas

Such a fun and easy breakfast or breakfast for dinner idea that the whole family will love!

Ingredients

  • 4 bagels or bagel thins cut in half
  • 12 eggs
  • 1/4 cup milk
  • kosher salt, pepper
  • 1 Tbsp butter
  • 1/4 cup maple syrup
  • 8 slices cheese of choice
  • 8 slices maple bacon cooked and crumbled

Instructions

  1. Toast the 8 bagel halves and place on a lined baking sheet, cut side up.

  2. Break the eggs into a large bowl, add milk, kosher salt, and pepper. Beat the eggs with a whisk or fork for 1 minute. 

  3. Put the butter into a skillet over medium low heat, when it’s melted add the eggs. Cook the eggs, stirring occasionally for 3 to 4 minutes or until they are fully cooked and scrambled together.

  4. Place the scrambled eggs on top of the bagel halves. Pour the maple syrup over top of the eggs. Top each with a slice of cheese and the cooked and crumbled maple bacon.

  5. Put the baking sheet into an oven set to 375 degrees for 5 to 7 minutes or until the cheese is melted.
