Maple Waffle Breakfast Casserole
I first made this Maple Waffle Breakfast Casserole years ago after I had it at one of our staff breakfasts.
Another teacher made it and she told me enough of the recipe that I was able to recreate it at home
(after several failed attempts 😉 ).
We aren’t big on eating large breakfasts, but we are HUGE fans of having breakfast-for-dinner!
This is easy enough to whip up after a long day since most of the time is spent in the oven cooking.
How to Make Maple Waffle Breakfast Casserole
I toasted 8 Eggo waffles and cut them into pieces.
While the waffles were toasting I browned up a pound of maple breakfast sausage.
Then in a large bowl, whisk together 8 eggs, 1 1/4 cups milk, and 1/2 cup maple syrup.
This must be 100% pure maple syrup, it’s just not the same with the processed stuff.
In a buttered 9×13 baking dish I tossed the waffle pieces, cooked maple sausage, and 1 1/2 cup shredded cheese together until evenly mixed.
The egg mixture gets poured right over top.
I used the back of a fork to press the waffles still peeking out into the egg mixture.
This bakes in a 375 degree oven for 45 minutes.
We love extra maple syrup drizzled over top of this Maple Waffle Breakfast Casserole.
And for those that love a sweet and spicy combination, it’s SO good if you add a little hot sauce as well.

Maple Waffle Breakfast Casserole
A delicious and easy breakfast casserole
Ingredients
- 1 pound maple breakfast sausage
- 8 Eggo Waffles
- 1 1/2 cups shredded cheese
- 8 eggs
- 1 1/4 cup milk
- 1/2 cup 100% pure maple syrup
Instructions

In a skillet over medium heat, cook the breakfast sausage for 5 to 8 minutes until fully cooked.

Toast the waffles and then cut into cubes. Place into a greased/ buttered 9×13 baking dish. Add the cooked sausage and cheese and toss together until evenly combined.

In a bowl beat together the eggs, milk, and maple syrup. Pour over top the waffles, sausage and cheese. Using the back of a fork, press the waffles down into the egg mixture.

Bake in a 375 degree oven for 45 minutes. Serve with extra maple syrup on the side if desired.
