Tiramisu Ice Cream Pie

Tiramisu Ice Cream Pie has all the components of tiramisu, but served as an easy to make pie recipe!

Traditional tiramisu is a layered dessert with coffee and rum soaked lady fingers, chocolate, and mascarpone cheese.

For my pie version I made the crust with lady fingers.

And incorporated coffee flavored ice cream, and top it with a mix of rum and mascarpone.

It’s the perfect summer dessert with the ice cream, and something a little out of the ordinary for any occasion đŸ™‚

How to Make Tiramisu Ice Cream Pie

So this dessert is not difficult, but it does take some planning ahead for time in the freezer.

The first step is freezing a package of lady fingers.

I found while recipe testing this, when frozen, they were MUCH easier to pulse in the food processor.

Pulse a few times and then add 6 tablespoons melted butter and 2 tablespoons sugar.

Then pulse a few more times.

Pour the crust in a pie pan and use either a spoon or a cup to flatten the bottom and form the crust up the sides of the pan.

Put this in the freezer for about 2 hours to set up.

You’ll want to soften 2 pints of coffee flavored ice cream before filling the pie crust.

I set my pints out for about 30 minutes and they were the perfect consistency.

Add the softened ice cream to the crust, use the back of a spoon to form in it the crust, and smooth the top.

Then back into the freezer for 3 more hours.

Right before serving, make the topping for this with mascarpone cheese and rum!

Probably not a kid friendly dessert with the rum, so if serving to kids add 3 tablespoons coffee or milk in place of the rum.

Perhaps the adult could enjoy their rum on side.

Whisk together the rum and mascarpone.

It does take a minute or two to come together, but eventually it will become this creamy consistency.

Spread the topping and add some chocolate shavings and you have yourself a gorgeous Tiramisu Ice Cream Pie đŸ™‚

You can certainly refreeze any leftovers.

But fair warning, when refreezing, the mascarpone gets frozen and is just slightly awkward to cut, still delicious though đŸ™‚

Tiramisu Ice Cream Pie is an easy to make no bake dessert with a lady finger crust, coffee ice cream and a rum and mascarpone topping

Ingredients

  • 1 7 oz package lady fingers frozen
  • 2 Tbsps sugar
  • 6 Tbsps melted butter
  • 2 pints coffee ice cream
  • 1 8 oz container mascarpone cheese
  • 3 Tbsps rum
  • chocolate shavings

Instructions

  1. Put the frozen lady fingers in a food processor or blender. Pulse a few times. Add the sugar and melted butter and pulse a few more times.

  2. Put this mixture into a pie pan and use a cup or spoon to help form into a pie crust, flat on the bottom and up the sides of the pie pan. Place in the freezer for at least 2 hours.

  3. Let the coffee ice cream come to room temp (I set mine out for 30 minutes) and put in the pie crust. Use a spoon to flatten the top. Place back in the freezer for 3 hours.

  4. Mix the mascarpone cheese and rum together (it does take a minute or two to come together) in a bowl and spread evenly on the pie, sprinkle chocolate shavings over top and serve.

    Note: You can replace the rum with 3 tablespoons coffee or milk if desired.
