Cherry and Goat Cheese Stuffed Chicken
Cherry and Goat Cheese Stuffed Chicken is a one pan chicken recipe full of yumminess, and a little out of the ordinary 🙂
A unique and delicious flavor combo for sure!
It does have only a few ingredients, making it pretty easy to prepare.
But, it can get a little messy… just embrace it and go with it, my friends 😉
How to make Cherry and Goat Cheese Stuffed Chicken
All you need is shown below, well with the chicken of course.
Some cherry preserves, goat cheese, balsamic glaze, and fresh basil.
The balsamic glaze can be found in the vinegar section of most grocery stores, or visit everyone’s best friend… Amazon!
First, butterfly 4 chicken breasts.
That simply means cut them in half lengthwise, but not slicing all the way through.
Fold them open and put some of the cherry preserves and some of the goat cheese in the center of each.
I also seasoned them with some kosher salt, pepper, and crushed red pepper flakes.
Then set a cast iron or oven safe skillet over medium heat.
Once hot drizzle a good amount of olive oil in the skillet and add the stuffed chicken breasts.
Season the outside of the chicken with a little more kosher salt, pepper, and crushed red pepper flakes.
And gently place the stuffed chicken in the skillet.
Cook 2 minutes per side and then pop into a 400 degree oven.
The chicken will cook in the oven for 18 to 22 minutes.
Drizzle Cherry and Goat Cheese Stuffed Chicken with the balsamic glaze and a sprinkle of fresh basil 🙂
Remove the chicken from the skillet and stir in more of the cherry preserves into the liquid in the skillet.
This will be an additional sauce to drizzle over top when serving.
You can enjoy this as is, but we got a little creative and sliced our chicken and served on leftover sliced Texas Roadhouse rolls with the sauce from the skillet.
But King’s Hawaiian rolls will work too if you like the chicken slider idea!

Cherry and Goat Cheese Stuffed Chicken
Cherry and Goat Cheese Stuffed Chicken is a great cast iron recipe with a delicious stuffing and topped with fresh basil and balsamic glaze!
Ingredients
- 4 chicken breasts
- 8 ounces cherry preserves/ jam
- 4 ounces goat cheese
- kosher salt, pepper, crushed red pepper flakes
- 2 to 3 tablespoons olive oil
- 2 to 3 ounces balsamic glaze (vinegar section of grocery store or Amazon)
- 1/4 cup fresh sliced basil
Instructions

Butterfly the chicken breasts (slice them lengthwise to open them, but not sliced all the way through… picture example in post above).

Put 4 ounces of the cherry preserves and goat cheese in the center of each butterflied chicken breast and season with kosher salt, pepper, and crushed red pepper flakes. Fold them up and season the outside with more kosher salt, pepper, and crushed red pepper flakes. (It's a little messy, but you got this!)

Set a cast iron or oven safe skillet over medium heat. Add the olive oil and place the stuffed chicken in the skillet. Cook 2 minutes, carefully flip, and cook 2 more minutes.

Place the skillet with the stuffed chicken in a 400 degree oven for 18 to 22 minutes. Drizzle the balsamic glaze and sprinkle the fresh basil over top.

Remove the chicken from the skillet and stir in the remaining 4 ounces of cherry preserves with liquid that's already in the skillet to use as a sauce to serve with the chicken.
