
Steak with Goat Cheese Butter
Steak with Goat Cheese Butter sounds like a fancy recipe, but it was a very simple and easy recipe to make.
Bonus points for having some leftover goat cheese butter for spreading on french bread.
If you have leftover butter it would be good in the fridge for a few days, or you could even freeze it to use later.
How to Make Steak with Goat Cheese Butter
Start with a two pound flank steak or flat iron steak.
Brush both sides with olive oil and season with kosher salt and pepper.

Then preheat your grill to medium high heat.
Or you can cook the steak in a large skillet on the stove over medium heat too.
The weather has been so nice lately I have been grilling almost everything!

The steak will cook about 4 to 6 minutes per side, depending on how you like your steak cooked and the thickness.

While the steak rests after grilling, make the goat cheese butter.
Make sure the stick of butter and 4 oz. goat cheese log are at room temperature.
It will make mixing them so much easier.

Put the butter, goat cheese, garlic paste, fresh chopped herbs, kosher salt, and pepper in a bowl.
For the herbs I am using what I have in my garden, which is thyme, rosemary, and basil.

Use a hand mixer and it will come together easily within a minute of mixing.

Top the steak with goat cheese butter over top.
The butter slowly melts into the steak and it is fabulous!
Just make sure when slicing the steak that you slice against the grain.
I highly recommend serving this with some sort of bread or rolls to have the butter on too…SO good!

Steak with Goat Cheese Butter is a quick and delicious dinner idea, you can use any cut of steak and this goat cheese butter is amazing!
Ingredients
- 2 pounds flank or flat iron steak
- olive oil, kosher salt, pepper
- 1 stick butter at room temp
- 4 oz goat cheese log at room temp
- 2 Tbsps garlic paste
- 1/4 cup chopped, fresh herbs (I used basil, thyme, and rosemary)
- kosher salt, pepper
Instructions

Brush the steak with olive oil and season both sides with kosher salt and pepper.

Preheat either your grill or a large skillet to medium high heat, Cook the steak 4 to 6 minutes per side, depending on how you like it cooked and how thick the steak is.

While the steak rests, make the goat cheese butter by putting the butter, goat cheese, garlic, herbs, kosher salt, and pepper in a bowl, Beat with a hand mixer for 1 minute.

Slice the steak against the grain and top with the goat cheese butter. Store any extra butter in the fridge.
