You won’t believe how simple this recipe is to make, especially for as fancy as it looks. Balsamic Chicken with Goat Cheese and Sundried Tomatoes would be delicious just on it’s own.
But adding the goat cheese and sundried tomatoes takes it to a whole new level.
My teenagers love goat cheese, but my 7 year old not so much.
He just ate his chicken plain, which is an easy fix to make everyone happy đŸ™‚
How to make Balsamic Chicken with Goat Cheese and Sun Dried Tomato
I marinated the chicken breasts in balsamic vinegar, soy sauce, and brown sugar.
This time it was more of a last minute meal, so it marinated about 2 hours.
I have marinated it overnight before and it is slightly better.
I have also used this marinade for boneless skinless chicken thighs and it’s extra good!
A few minutes on the grill, maybe like 5 minutes per side, and you’re chicken is done đŸ™‚
Literally all that’s left to do is top balsamic chicken with creamy goat cheese crumbles, tangy and sweet sundried tomatoes, and some fresh basil…dinner is done.
I had some glaze left from making Balsamic Asparagus Puff Pastry Wraps.

So I drizzled some on top.
It’s not needed, but gives is more balsamic flavor.

Balsamic Chicken with Goat Cheese and Sundried Tomatoes
An easy marinade and lots of yummy toppings turns regular chicken into an extra special meal!
Ingredients
- 1/3 cup balsamic vinegar
- 1/3 cup soy sauce
- 3 Tbsps brown sugar
- 4 chicken breasts boneless and skinless
- 4 oz goat cheese crumbles
- 4 oz sundried tomatoes
- fresh basil
- Optional: balsamic glaze
Instructions

Whisk together balsamic vinegar, soy sauce, and brown sugar.

Place chicken in a gallon size plastic bag. Pour balsamic marinade into the bag and massage it to coat the chicken evenly. Marinate at least 1 hour or overnight.

When chicken has marinated grill over medium high heat for 5 minutes per side.

Top each chicken breast with goat cheese, sundried tomatoes, fresh basil, and balsamic glaze (if desired)
