Air Fryer Street Corn Chicken Salads is such an easy and healthy recipe!
I can sure as heck throw down in the kitchen with alllll the homemade, from scratch recipes.
But on extra busy nights you better believe I take some lazy home cook shortcuts 🙂
In this recipe I am using my air fryer and some store bought salad kits to make a stupid simple dinner recipe!
How to make Air Fryer Street Corn Chicken Salads
First cut a pound of chicken thighs or chicken breasts into bite size pieces.
Put them in a bowl along with some lime juice, minced garlic, olive oil, chili powder, kosher salt, and pepper.
Then toss the chicken bites until they are evenly mixed.
Next brush some olive oil on two ears corn on the cob.
And season all sides with more chili powder, kosher salt, and pepper.
Place the chicken and corn in the air fryer basket.
And set the air fryer to 390 degrees for 12 to 14 minutes.
Let the chicken and corn cool slightly.
And cut the kernels off of the corn.
Then assemble two of these Mexican Street Corn Salad Kits.
They are awesome because the veggies are already chopped and washed.
Plus the dressing and toppings packets are sooooo convenient.
Finally top the salads with the cooked chicken and corn 🙂

Plus a little more chili powder to make them look extra street corn-ish.
Talk about an easy way to get a fabulous dinner on the table with minimal effort!
If you aren’t serving a family, these salads can easily be meal prepped with the dressing on the side.

Air Fryer Street Corn Chicken Salads
Air Fryer Street Corn Chicken Salads is such an easy, healthy air fryer recipe, chicken and corn cooked in the air fryer served on salad kits!
Ingredients
- 1 pound boneless, skinless chicken thighs or breasts cut in bite size pieces
- 1 tablespoon lime juice
- 3 to 4 cloves garlic minced
- olive oil, chili powder, kosher salt, pepper
- 2 ears corn on the cob
- 2 Mexican Street Corn salad kits (I used Taylor Farms)
- Optional: shredded cheese
Instructions

Put the chicken in a bowl and add the lime juice, garlic, a drizzle of olive oil, chili powder, kosher salt, and pepper. Toss until evenly mixed.

Brush more olive oil on the corn and season with chili powder, kosher salt, and pepper.

Put the corn and chicken in the air fryer basket. Set the air fryer to 390 degrees for 12 to 14 minutes. Let cool slightly and cut the corn off the cob.

Assemble the salad kits according to the package directions and top each salad with some of the corn and chicken. Top with shredded cheese and more chili powder if desired.
