Sweet Chili Calamari Salad
Since I had a bag leftover I decided to make a recipe for Sweet Chili Calamari Salad.
My kids like to do “Mom Chopped” cooking challenges with me each month.
Last month one of the secret ingredients was calamari.
They bought two bags for the challenge, but I only used one. I froze it thinking I’d eventually use it.
What an amazing treat to enjoy fried calamari at home!
Longhorn Steakhouse used to have a calamari dish tossed in sweet chili sauce and came with ranch for dipping.
I thought to combine those flavors for the salad.
How to Make Sweet Chili Calamari Salad
This is a bag of already cut calamari rings.
And a little help from the store with a salad mix from the store makes this dinner even easier to prepare.
And the dressing was super simple, all I did was combine a half cup of ranch with a half cup sweet chili sauce.
Add buttermilk and some sriracha to a bowl with the calamari.
And in a separate bowl add some cornstarch, kosher salt, and pepper.
The breading station set up just like this with a skillet filled an inch deep with vegetable oil over medium heat.
Once the oil reaches 350 degrees we are ready to fry!
Coat a few rings of calamari in the cornstarch and gently place in the oil for 2 to 3 minutes.
Then onto some paper towels to absorb any extra oil.
Fry the remaining calamari in a few small batches.
Then divide the salad mix and some feta cheese between four plates or bowls.
Top each salad with the fried calamari and the sweet chili ranch dressing.

Sweet Chili Calamari Salad
Sweet Chili Calamari Salad has crispy fried calamari rings over a bed of lettuce with a sweet chili ranch dressing, a super yummy salad recipe
Ingredients
- 1 pound calamari rings
- 1 cup buttermilk
- 1 Tbsp sriracha (or hot sauce of choice)
- 1 cup cornstarch
- kosher salt, pepper
- vegetable oil (enough to fill a small skillet 1 inch deep)
- 1/2 cup ranch dressing
- 1/2 cup sweet chili sauce
- 6 cups lettuce of choice (I used field green mix)
- 3 oz crumbled feta cheese
Instructions

Put the calamari rings in a bowl, add the buttermilk and sriracha, mix together. Put the cornstarch, kosher salt, and pepper in a separate bowl and mix together.

Pour enough vegetable oil in a skillet about 1 inch deep. Set it over medium heat for about 4 to 5 minutes, or until the oil reaches 350 degrees.

Coat a few calamari rings with the cornstarch and gently place in the oil for 2 to 3 minutes. Remove and place them on a plate lined with paper towels. Repeat with remaining calamari.

Mix together the sweet chili sauce and ranch for the salad dressing.

Divide the lettuce between 4 plates or bowls, top each with the feta cheese and calamari. Serve with the sweet chili ranch dressing.
