One Pot Chicken Broccoli Pasta

I love easy one pot recipes that are kid friendly and delicious, don’t you?! If so, try One Pot Chicken Broccoli Pasta for a dinner win!

All you need are the simple ingredients shown below, plus a pound of chicken.

How to make One Pot Chicken Broccoli Pasta

First cut a pound of chicken breasts into bite size pieces.

Then set a large pot over medium heat and add some olive oil.

Once hot add the chicken, kosher salt, pepper, Italian seasoning, and minced garlic.

Cook the chicken for 5 to 6 minutes, then remove from the pot.

Drizzle a little more olive oil and throw in the broccoli florets from two broccoli crowns along with kosher salt and pepper.

These will cook just about 4 to 5 minutes.

Put the broccoli aside with the chicken, turn the stove to high, and add 4 cups of chicken broth.

Also add 2 tablespoons butter, a pint of half and half, kosher salt, pepper, Italian seasoning, and a pound of either angel hair pasta or spaghetti.

Bring this to a boil, then reduce the heat to medium low.

Cook the pasta for about 6 to 7 minutes, stirring a few times.

The pasta will slowly soak in all the broth creating a great sauce.

Taste for seasoning and add more kosher salt and pepper if needed.

Finally put the broccoli and chicken back into the pot along with parmesan cheese.

Stir it all until combined and serve right away.

Ingredients

  • olive oil, kosher salt, pepper, Italian seasoning
  • 1 pound boneless, skinless chicken breasts or thighs cut into bite size pieces
  • 5 to 6 cloves garlic minced
  • 2 broccoli crowns cut into small florets
  • 2 tablespoons butter
  • 4 cups chicken broth
  • 1 pint half and half
  • 1 pound angel hair pasta or spaghetti
  • 4 ounces shredded parmesan cheese
  • Optional: parsley for garnish

Instructions

  1. Set a large pot over medium heat and once hot add some olive oil, the chicken, garlic, kosher salt, pepper, and Italian seasoning. Cook 5 to 6 minutes, stirring a few times, remove the chicken and set aside.

  2. Add a little more olive oil to the same pot still over medium heat along with the broccoli, kosher salt and pepper. Cook 4 to 5 minutes, stirring a few times. Remove and set aside.

  3. Raise the heat to high and add the butter to the same pot along with the chicken broth, half and half, pasta, kosher salt, pepper, and Italian seasoning. Bring to a boil then reduce the heat to medium low for 6 to 7 minutes, stirring a few times. Taste for seasoning and add more kosher salt and pepper if needed.

  4. Add the cooked chicken, broccoli, and parmesan cheese, stir and cook another minute. Serve with parsley for garnish if desired, best if served right away.
