We could not believe the amazing flavor in this meatless chili, and bonus points for how healthy it is!
How to make Slow Cooker Vegetarian Chili
First we have some dicing to do, friends.
Dice an onion, a red pepper, two poblano peppers, and two jalapenos and add them to the Crock Pot.
Also some minced garlic.
Then add a can of corn, black beans that have been rinsed, and some spices.
I went with 3 tablespoons chili powder, 2 tablespoons paprika, a tablespoon of cumin, and plenty of kosher salt and pepper.
Plus some crushed red pepper flakes because we like things spicy.
Finally in goes a 28 ounce can of crushed tomatoes, vegetable broth, and an optional ingredient… green chiles.
It really doesn’t matter the order that you add your ingredients.
But give it a stir before setting the slow cooker on low.
And just let it cook for 7 to 9 hours.
Taste before serving and add more kosher salt, pepper, or any of the other spices if needed.
We topped Slow Cooker Vegetarian Chili with sour cream, cheese, and hot sauce 🙂
Crackers too for a nice crunch!
My meat loving husband even devoured this and gave it multiple compliments, so you KNOW it has to be amazing.
And leftovers are even better the next day!
