Slow Cooker Vegetarian Chili

I am not a vegetarian, but Meatless Monday recipes are a new thing for us, so we gave this easy and healthy recipe for Slow Cooker Vegetarian Chili a try… and it was a winner!

Crock Pot dinner recipes are always welcome, they make getting dinner on the table super simple.

We could not believe the amazing flavor in this meatless chili, and bonus points for how healthy it is!

How to make Slow Cooker Vegetarian Chili

First we have some dicing to do, friends.

Dice an onion, a red pepper, two poblano peppers, and two jalapenos and add them to the Crock Pot.

Also some minced garlic.

Then add a can of corn, black beans that have been rinsed, and some spices.

I went with 3 tablespoons chili powder, 2 tablespoons paprika, a tablespoon of cumin, and plenty of kosher salt and pepper.

Plus some crushed red pepper flakes because we like things spicy.

Finally in goes a 28 ounce can of crushed tomatoes, vegetable broth, and an optional ingredient… green chiles.

It really doesn’t matter the order that you add your ingredients.

But give it a stir before setting the slow cooker on low.

And just let it cook for 7 to 9 hours.

Taste before serving and add more kosher salt, pepper, or any of the other spices if needed.

  • 2 poblano peppers diced, seeds and stems removed
  • 2 jalapeno peppers diced, seeds and stems removed
  • 1 red bell pepper diced, seeds and stems removed
  • 1 onion diced
  • 7 to 8 cloves garlic minced
  • 1 15 ounce can corn drained
  • 1 15 ounce can black beans drained and rinsed
  • 1 28 ounce can crushed tomatoes
  • 1 14 ounce can vegetable broth
  • 1 4 ounce can green chiles (optional)
  • 3 to 4 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • kosher salt, pepper, crushed red pepper flakes
  • Optional: cheese, sour cream, hot sauce, crackers


  1. Add all of the ingredients to the slow cooker and stir until combined. Turn it on low for 7 to 9 hours.

  2. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, chili powder, paprika, and/or cumin if needed.

  3. Serve with toppings such as cheese, sour cream, hot sauce, crackers.
