Summer Salad with Sweet Lime Dressing
I could not think of a better name for this easy, healthy recipe than Summer Salad.
Fresh from the garden, vibrant colors and bright flavors.
That, to me, screams summer!
I picked these tomatoes and a cucumber from my garden and threw this salad together.
All based on what I had in my kitchen at the time.
How to make Summer Salad with Sweet Lime Dressing
It’s the perfect combo of flavors for sure with the salty feta cheese, sweet lime dressing.
And I used pickled red onions which gave this dish a little extra zing.
You could use regular sliced red onions if you don’t have pickled, but they are super easy to make.
Typically I use balsamic vinegar when making a tomato salad.
But I tried using lime and it gave this salad even more of a bright, fresh flavor.
Olive oil, lime juice, sugar, kosher salt, and pepper whisked together and the dressing was complete 🙂
I cut the tomatoes in half, peeled and sliced the cucumber, added some feta cheese and sweet pickled red onions and tossed it together with the dressing.
I tasted it and added more kosher salt and fresh cracked pepper.
Top it off with some fresh basil and you have yourself a gorgeous summer salad 🙂

Summer Salad with Sweet Lime Dressing
A light and refreshing salad made with garden fresh tomatoes and a simple homemade dressing.
Ingredients
- 2 Tbsps olive oil
- 1 Tbsp lime juice
- 1/2 Tbsp sugar
- kosher salt, pepper
- 2 cups cherry or grape tomatoes
- 1 small cucumber
- 1/4 cup sliced red onions or pickled red onions
- 1/2 cup crumbled feta cheese
- fresh basil
Instructions

In a small bowl, whisk together olive oil, lime juice, sugar, kosher salt, and pepper. Set aside.

Cut the tomatoes in half. Peel the cucumber and cut into slices.

Combine tomatoes, cucumbers, red onions, and feta cheese in a bowl. Pour the lime dressing over top and mix together until everything is evenly coated. Taste for seasoning and add more kosher salt or pepper if needed.

Serve with fresh basil over top.
