Berry Bacon Salad with Light Balsamic Dressing

When it’s nice and bright and sunny outside, this is the perfect summer meal to enjoy.
How to Make Berry Bacon Salad with Light Balsamic Dressing
I made a lighter version of balsamic vinaigrette to cut a few calories (it made me feel less guilty about adding the bacon 🙂 ).
Balsamic Vinaigrette is made by mixing balsamic vinegar, olive oil, and dijon mustard.
But, I mixed mine with light mayo and a little sugar to add sweetness.
Just three ingredients for this super simple dressing.
I’m sure fat free mayo would work too if you’re looking for a no fat version.
Just look at the bright colors and fresh ingredients!
I used baby spring mix as my lettuce, strawberries, blueberries. bacon, goat cheese, and candied pecans.
If you don’t like goat cheese, feta or blue cheese would be good too.
I only used a half pound of bacon, feel free to use more if you’re not trying to watch calories, because obviously more bacon would be better!
Berry Bacon Salad would be the perfect salad to make for a Fourth of July celebration with the red, white, and blue colors!

I always make more than what we will eat at dinner, so as I made our dinner salads I made a few extras in containers for lunches or later this week.
I already had everything out and ready to go, so just a few extra minutes is all it took to prep these ready to go meals.
Dressing is on the side in a little 2 oz container.

Berry Bacon Salad with Light Balsamic
A light and refreshing salad with a yummy homemade dressing!
Ingredients
Light Balsamic Dressing
- 3/4 cup light mayo
- 2 Tbsp balsamic vinegar
- 1 Tbsp sugar
Berry Bacon Salad
- 10 oz bag baby spring mix (or lettuce of choice)
- 1/2 pound bacon cooked and crumbled
- 1 pint strawberries sliced
- 1 pint blueberries
- Optional Toppings: crumbled goat cheese, candied pecans
Instructions

For the dressing combine light mayo, balsamic vinegar, and sugar into a bowl and whisk together. Taste for seasoning, add more vinegar or sugar if desired.

Divide the lettuce evenly among 6 plates (or containers if meal prepping). Top each with bacon, strawberries, and blueberries. Add goat cheese and candied pecans if desired.
