What better name for this gorgeous salad recipe than Sweet Summertime Corn Salad?!

The end of sweet summertime means fresh corn, fresh tomatoes, and tons of fresh basil in the garden.

Pair these with bacon, avocado, red onion, and feta and you have a gorgeous and healthy salad.

Yes, yes, this can be made with canned corn but if fresh is available please pinky promise me you’ll use it?!

How to Make Sweet Summertime Corn Salad

The sweet lime dressing adds a little somethin’ somethin’ that I cannot even put into words (and it’s pretty rare that I am rendered speechless đŸ˜‰ )

It starts with 8 ears of corn that I boil for 10 minutes in salted water.

Add a little sugar to the water for some added sweetness.

A trip down memory lane…

Sounds a little weird, but shucking my own corn makes me a little sad.

When my girls were little they always wanted to “help” in the kitchen, and they were the best corn shuckers around!

Just a nice memory picturing all three girls making a huge corn shucking mess around the garbage can “helping” mom đŸ™‚ (sigh, sniff sniff)

Sorry, squirrel moment…next step is cooking 8 slices of bacon in a skillet over medium heat.

Sweet Summertime Corn Salad

I make my life easier by cutting the raw bacon with kitchen scissors directly into the skillet.

I also dice a red onion, which I don’t prefer the pungent, strong taste of raw onions…so here’s a trick for you if you feel the same!

Place the diced onion in a bowl of ice water for 10 minutes, drain, and the raw red onion still has flavor but not that raw onion sharpness.

All that’s left is to cut the kernels off the corn, place in a large bowl with the bacon, red onions, crumbled feta, cherry or grape tomatoes (cut in half), diced avocado, and fresh basil leaves.

Dressing the Sweet Summertime Corn Salad

The dressing is simply olive oil, lime juice, sugar, kosher salt, and pepper.

Mix evenly to coat and taste for seasoning. Add more lime, kosher salt, or pepper if needed.

Now this is good in the fridge for a few hours but if adding the avocado I wouldn’t wait much longer to serve it.

Or maybe add the avocado right before serving if making this ahead of time.

The lime juice in the dressing will keep the avocado from browning for a few hours at least.

Sweet Summertime Corn Salad

Ingredients

  • 8 ears corn on the cob
  • 8 slices bacon
  • 1 red onion
  • 1 pint cherry or grape tomatoes
  • 6 oz crumbled feta cheese
  • 1 avocado
  • 1 bunch fresh basil (about 15 leaves)
  • 1 Tbsp olive oil
  • 3 Tbsps fresh lime juice
  • 1 Tbsp sugar
  • kosher salt, pepper

Instructions

  1. Boil the corn for 10 minutes in salted water. Let cool and cut the kernels off of the cob and place in a large bowl.

  2. Cut the bacon with kitchen scissors directly into a skillet over medium heat. Cook 5 minutes or until fully cooked. Remove and place on paper towels to drain.

  3. Dice the red onion (place in ice water for 10 minutes and drain if you prefer less pungent red onions) and cut the tomatoes in half. Place the cooled bacon, red onion, and tomatoes and feta cheese in the same bowl as the corn. Slice the basil leaves, dice the avocado and place in the same bowl.

  4. Add the olive oil, lime juice, sugar, kosher salt, and pepper onto the corn salad and mix until evenly coated. Taste for seasoning and add more lime juice, kosher salt, or pepper if needed.

  5. Serve immediately or refrigerate for a few hours before serving.

    Note: The lime juice will prevent the avocado from browning for several hours, but after a few hours the avocado may turn brown.
