
Italian Sausage Spaghetti Soup
Cozy comfort food doesn’t get any better than this recipe for Italian Sausage Spaghetti Soup.
A one pot wonder sure to make you feel warm and fuzzy on a cold day.

How to make Italian Sausage Spaghetti Soup
Start with a large soup pot or Dutch oven over medium heat.
Then add some olive oil and a diced onion.

Season with kosher salt, pepper, and crushed red pepper flakes.

Cook the onions for about 5 minutes, stirring a few times.
Then add in a pound of Italian sausage and minced garlic.
Be sure to remove the casing on the sausage (if they are in casings, that is).

Cook the sausage and onions for 5 more minutes, breaking apart the sausage as it cooks.
Then pour in 4 cups of chicken broth and a 28-ounce can of crushed tomatoes.

Season with more kosher salt, pepper, crushed red pepper flakes, and plenty of Italian seasoning.
Raise the heat to high until the soup starts to boil.
Then reduce heat to medium low and simmer for 15 minutes.

Finally add in some freshly chopped spinach, a cup of heavy cream, and 4 to 5 ounces of uncooked spaghetti.

Just break the pasta apart into inch size pieces and it will cook in the soup.

Simmer for another 15 minutes or so, stirring a few times, and we are ready to devour!

Sprinkle Parmesan cheese over your Italian Sausage Spaghetti Soup 🙂
And serve with either garlic bread or a toasted French baguette!

Italian Sausage Spaghetti Soup
Italian Sausage Spaghetti Soup has sausage and spinach in a creamy tomato broth with pieces of pasta for a comforting bowl of yumminess!
Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- kosher salt, pepper, crushed red pepper flakes
- 8 cloves garlic minced
- 1 pound ground Italian sausage casings removed
- 4 cups chicken broth
- 1 (28-ounce) can crushed tomatoes
- 2 tablespoons Italian seasoning
- 6 ounces fresh spinach chopped
- 1 cup heavy cream
- 4 to 5 ounces uncooked spaghetti broken into inch pieces
- 1/3 cup grated parmesan cheese
Instructions

Set a large soup pot over medium heat. Add olive oil, onion, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, stirring a few times.

Add garlic and sausage. Cook 5 more minutes, breaking apart sausage.

Add chicken broth, tomatoes, Italian seasoning, more kosher salt, pepper, and crushed red pepper flakes. Raise heat to high to boil, then reduce heat to medium low and simmer 15 minutes, stirring a few times.

Add spinach, cream, and spaghetti. Cook 10 to 15 more minutes, stirring a few times. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning if needed.

Serve in bowls with parmesan cheese sprinkled over top.
