Creamy Tuscan Chicken Soup

When it’s literally 0 degrees outside, some warm comforting chicken soup is much needed! This recipe for Creamy Tuscan Chicken Soup really hit the spot on this cold winter evening.

I kept this one pretty simple and easy.

If you are wanting to jazz it up, mushrooms or white beans would be awesome additions.

How to make Creamy Tuscan Chicken Soup

First set a large soup pot over medium heat.

Add olive oil, a diced onion, kosher salt, pepper, and crushed red pepper flakes.

Cook the onions for a few minutes and add a good amount of minced garlic.

Then pour 5 cups of chicken broth into a pot and raise the heat so it comes to a boil.

Along with 2 tablespoons Italian seasoning.

I am using my favorite Blackstone Tuscan Herb Blend.

Once boiling, add 1 1/2 pounds boneless skinless chicken thighs and lower the heat to medium low.

Let the chicken simmer for 10 minutes.

Remove the chicken with tongs, chop into smaller pieces, and return the chicken to the soup pot.

Along with a bunch of kale that has the stems removed and roughly chopped.

And let this simmer for 5 minutes, stirring a few times.

Finally, raise heat to high and add a cup of sundried tomatoes, 1 1/2 cups heavy cream, 1/2 cup grated parmesan cheese, and more kosher salt and pepper.

Once bubbling, reduce heat to simmer on medium low for 10 to 15 more minutes, stirring a few times.

Taste for seasoning and add more kosher salt, pepper, Italian seasoning and/or crushed red pepper flakes as needed.

It always takes me a few tries to get the seasoning juuuuusssst right 🙂

Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • kosher salt, pepper, crushed red pepper flakes
  • 8 cloves garlic minced
  • 5 cups chicken broth
  • 2 tablespoons Italian seasoning blend (I used Blackstone Tuscan Herb)
  • 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts)
  • 1 bunch kale stems removed, roughly chopped
  • 1 cup sliced sundried tomatoes
  • 1 1/2 cups heavy cream
  • 1/2 cup grated parmesan cheese

Instructions

  1. Set a large soup pot over medium heat. Add olive oil, onions, kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring a few times.

  2. Add garlic and cook 1 minute. Add chicken broth and Italian seasoning, raise heat to high and bring to a boil. Add chicken, reduce heat to medium low and simmer 10 minutes.

  3. Remove chicken and chop, return to pot and add kale. Simmer on medium low for 5 minutes.

  4. Raise heat to high, add sundried tomatoes, heavy cream, parmesan cheese, and more kosher salt and pepper.

  5. Once bubbling, reduce heat to simmer on medium low for 10 to 15 more minutes, stirring a few times. Taste for seasoning and add more kosher salt, pepper, Italian seasoning and/or crushed red pepper flakes as needed.
