
Creamy Tuscan Chicken Soup is an Italian soup recipe with just a few simple ingredients, a perfect cold weather comfort food dinner idea!
Set a large soup pot over medium heat. Add olive oil, onions, kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring a few times.
Add garlic and cook 1 minute. Add chicken broth and Italian seasoning, raise heat to high and bring to a boil. Add chicken, reduce heat to medium low and simmer 10 minutes.
Remove chicken and chop, return to pot and add kale. Simmer on medium low for 5 minutes.
Raise heat to high, add sundried tomatoes, heavy cream, parmesan cheese, and more kosher salt and pepper.
Once bubbling, reduce heat to simmer on medium low for 10 to 15 more minutes, stirring a few times. Taste for seasoning and add more kosher salt, pepper, Italian seasoning and/or crushed red pepper flakes as needed.
