Chicken Bacon Ranch Soup
My son was quite intrigued when he asked what was for dinner and I responded with Chicken Bacon Ranch Soup.
His eyes lit up and he was all like “Whaaaaatttt?!… okay mom, I’ve never heard of that, but I can’t wait to try it!”
I mean, the chicken bacon and ranch combo is like the trifecta of flavortown, right?!
This is a low carb recipe if you are doing the Keto thing, but you certainly don’t need to be to enjoy this comfort food creation.
I baked 2 pounds of chicken breasts to have shredded chicken for the recipe, but a store-bought rotisserie chicken works too.
How to make Chicken Bacon Ranch Soup
These are the rest of the simple ingredients that you will need.
And I just shredded the chicken by hand.
First set a large soup pot over medium heat.
And cut a pound of bacon right into the soup pot using kitchen scissors.
While the bacon is cooking dice an onion and mince some garlic cloves.
Remove the bacon from the pot and set it aside.
And leave a little bacon grease in the pot to fry up the onions.
Then add the diced onion, kosher salt, and pepper to the same pot over medium heat.
Cook the onions in the bacon grease for about 5 minutes.
Then add the garlic and cook just another minute.
Next pour 6 cups of chicken broth into the pot along with 2 tablespoons of dry ranch seasoning.
Raise the heat until it boils, then reduce the heat to medium low and simmer for 10 minutes.
Heavy cream, the shredded chicken, and most of the bacon join the party next!
Boil again and reduce the heat to medium low for 10 more minutes.
Taste for seasoning and add more kosher salt, pepper, and/or ranch seasoning if needed.
Finally, remove 2 tablespoons of the broth in a small bowl and mix in a tablespoon of cornstarch.
This will thicken the soup.
Yes, cornstarch does have carbs but just this little bit won’t hurt, we are still at only 10 carbs per serving.
Right before serving stir in 2 cups of shredded cheddar cheese until melted.
Garnish Chicken Bacon Ranch Soup with the remaining bacon (I also added cheese and parsley just for show)!
So warm and comforting, especially on this day where it was snowy and cold.

Chicken Bacon Ranch Soup
Chicken Bacon Ranch Soup is a creamy and cheesy comfort food soup recipe that is low carb and Keto friendly!
Ingredients
- 1 pound bacon
- 1 onion diced
- kosher salt, pepper
- 6 cloves garlic minced
- 6 cups chicken broth
- 2 tablespoons dry ranch seasoning
- 1 cup heavy cream
- 4 cups cooked, shredded chicken (approx. 2 pounds)
- 1 tablespoon cornstarch
- 2 cups shredded cheddar cheese
Instructions

Set a large soup pot over medium heat. Use kitchen scissors to cut the bacon into the pot. Cook 8 to 10 minutes, stirring a few times. Remove the bacon once cooked how you prefer and place on a plate lined with paper towels. Remove almost all of the bacon grease, leaving about 2 tablespoons in the pot.

To the same pot, still over medium heat, add the onion, kosher salt, and pepper. Cook 5 minutes, stirring a few times. Add the garlic and cook 1 more minute.

Pour in the chicken broth and ranch seasoning, raise heat to high and once boiling reduce heat to medium low and simmer for 10 minutes.

Add the heavy cream, chicken, and most of the bacon (save some to garnish). Raise heat to high and once boiling reduce heat to medium low and simmer 10 minutes.

Taste for seasoning and add more kosher salt, pepper, and/or ranch seasoning if desired. Remove 2 tablespoons of the broth in a small bowl. Stir in the cornstarch and add back to the soup pot. Let simmer 10 minutes. This will thicken the soup.

Add the cheese, stir until melted and serve with remaining bacon sprinkled over top.

I used the bottle of dry ranch seasoning, but it also comes in a packet. You can see the package of it in the ingredients picture.
