Japanese Soup with Bone Broth
You know when you go to a hibachi restaurant and you get the soup and salad before your meal, right?! Well Japanese Soup with Bone Broth is my recipe copycat version.
Really I should call it my new and improved version because this recipe brings WAAAYYY more flavor.
I made a few changes such as using sliced baby portobello mushrooms because… well… I just love them đŸ™‚
And also added some ginger.
The biggest change is added nutrition from using bone broth rather than regular broth.
How to Make Japanese Soup with Bone Broth
Set a saucepan over medium heat.
Then add some vegetable oil along with 8 ounces of sliced portobello mushrooms.
Season with kosher salt and pepper.
Cook the mushrooms for a few minutes, stirring a few times.
After 4 to 5 minutes, add some ginger paste or minced ginger.
And cook for another minute.
Next pour 32 ounces of bone broth in with the mushrooms.
You can use store bought or make your own.
Bone broth has some great health benefits such as weight loss, great for your skin, helps with digestive issues, and supports your immune system.
It tastes like regular broth, just with more of a rich flavor in my opinion.
Also add 2 tablespoons soy sauce and some sliced green onions or chives.
Bring this to a boil, reduce the heat to medium low and let it simmer for a few minutes.
Here is what I think really makes this soup… French fried onions!
They’re not just for topping green bean casserole anymore, friends… they are perfect in this soup.
Add them in right before serving.

We had this as part of a hibachi themed meal complete with Blackstone Chicken Lo Mein and even the salad with ginger dressing.

Japanese Soup with Bone Broth
Japanese Soup with Bone Broth is like the clear soup that you get at hibachi restaurants, but this one is super healthy made with bone broth
Ingredients
- 1 Tbsp vegetable oil
- 8 oz sliced baby portobello mushrooms
- kosher salt, pepper
- 1 Tbsp ginger paste or grated ginger
- 32 oz box bone broth (beef, chicken, or vegetable)
- 2 Tbsps soy sauce
- 1/4 cup sliced green onions or chives
- 1 cup french fried onions
Instructions

Set a saucepan over medium heat. Once hot add the oil and the mushrooms, kosher salt, and pepper. Cook 4 to 5 minutes, stirring a few times.

Add the ginger and cook 1 more minute.

Add the bone broth, soy sauce, and green onions or chives. Bring to a boil and reduce the heat to simmer for a few minutes.

Right before serving, stir in the french fried onions.
