Flank Steak with Blue Cheese Butter was for dinner last night and it was fabulous, easy recipe!
Lots of things I do make my boys smile, but one thing guaranteed to bring on that happy face is mentioning that steak is for dinner.
Even better was that I served it with rolls and sauteed mushrooms.
So they also made little steak and mushroom sandwiches with the extra blue cheese butter.
So creative 🙂
How to make Flank Steak with Blue Cheese Butter
I kept the steak simply seasoned with olive oil, kosher salt, and pepper.
The real MVP here was the blue cheese garlic butter!
Room temperature butter, blue cheese crumbles, and garlic paste go into a bowl.
And mash it together until evenly mixed.
So simple, yet an unbelievable combo with the steak!
Flank steak is one of my favorite cuts of meat.
To cook it perfectly medium rare to medium start it in a cast iron skillet over medium high heat with olive oil.
It will cook 3 to 4 minutes per side.
During the last minute spoon a tablespoon of the blue cheese butter over top.
Spread it around so it melts into the steak.
Then place the steak on a cutting board to rest for 5 to 10 minutes.
Warning: this takes a tremendous amount of self control!
Because just look at it…totally droolworthy!
Slice the Flank Steak with Blue Cheese Butter against the grain and add more of the blue cheese garlic butter over top.
Very important to slice against the grain with flank steak.
If you cut the other way it gets very tough.

Flank Steak with Blue Cheese Butter
Flank Steak with Blue Cheese Butter starts with flank steak served with a blue cheese garlic butter melted over top
Ingredients
- 1 1/2 to 2 pound flank steak
- 2 Tbsps olive oil
- kosher salt, pepper
- 3 Tbsps butter at room temp
- 2 oz crumbled blue cheese
- 1/2 Tbsp garlic paste or finely minced garlic
Instructions

Brush the steak with 1 Tbsp of the olive oil and sprinkle both sides with kosher salt and pepper.

In a small bowl add the butter, blue cheese, and garlic. Mash together until evenly mixed.

In a skillet over medium high heat add the remaining olive oil and the steak. Cook 3-4 minutes per side for medium rare to medium doneness. During the last minute of cooking spoon 1 Tbsp of the blue cheese butter on top of the the steak and let it melt into the steak.

Remove the steak from the pan and let it rest 5 to 10 minutes.

Slice the steak against the grain and serve with remaining blue cheese garlic butter over top.
