Grilled Steak with Corn Avocado Relish
Some nights I feel like getting fancy and making a recipe for Grilled Steak with Corn Avocado Relish.
Steak is a favorite for dinner around here.
Some nights is just a simple steak with olive oil, salt, and pepper.
That’s all a good steak really needs, right?!
It’s not a lot of extra effort, but it does turn regular grilled steal into something even more spectacular.
How to make Grilled Steak with Corn Avocado Relish
Start by brushing olive oil, kosher salt, and pepper on a two pound flank steak, two ears of corn, and a red bell pepper.
Flat iron steak is another cut that would be amazing here.
Then put the steak and veggies onto a grill over medium high heat,
They all take about 8 to 10 minutes total, turning a few times as they grill.
I like my steak medium so closer to the 8 minute mark for the steak.
Getting a nice char on the veggies makes the relish super good!
As the steak rests, make the corn avocado relish.
Cut the corn kernels off the cob and dice the red pepper.
Then add some fresh cilantro, a diced avocado, and lime juice.
Mix it all together and taste for seasoning.
Add more kosher salt and pepper as needed.
Then slice the steak against the grain.
And top with the relish for a stunning presentation đŸ™‚

Grilled Steak with Corn Avocado Relish
Grilled Steak with Corn Avocado Relish is the perfect summer dinner, steak grilled to perfection served with a fresh corn and avocado relish!
Ingredients
- 1 flank steak or flat iron steak (approx 2 pounds)
- 2 ears corn on the cob
- 1 red bell pepper
- olive oil, kosher salt, pepper
- 1 avocado diced
- 2 Tbsps lime juice
- 1/2 cup chopped cilantro
Instructions

Brush all sides of the steak, corn, and red pepper with olive oil and sprinkle with kosher salt and pepper.

Preheat the grill to medium high. Grill the steak, corn, and red pepper for 8 to 10 minutes total, turning a few times as they cook.

Let the steak rest as you make the corn and avocado relish.
Cut the kernels off of the corn cobs and put them in a bowl. Dice the red bell pepper and add to the bowl. Add the diced avocado, lime juice, cilantro, kosher salt, and pepper. Gently mix together. Taste for seasoning and add kosher salt and pepper if needed.
